Sweet & Salty Banana Walnut Oatmeal

A Sweet & Salty Banana Walnut Oatmeal is just what you’ve been looking for in a breakfast! I’m taking our traditional oatmeal to the next level with a decadent yet refined sugar-free recipe. Best of all, it’s quick to make!

I don’t know about you, but I enjoy a little salty with my sweet. The warm and sweet cinnamon-spiced bananas pair beautifully with omega-3 rich and crunch walnuts. This makes for a gourmet vegan breakfast, at home. You’re going to want to start by making the oats. If you want a creamier batch then use 2 cups of plant mylk OR 2 cups of water and if you don’t have enough milk then go for half and half mylk and water. Heat your liquid of choice in a medium-size pot and let it boil before adding in the oats. Once you’ve added your oats, turn down the heat to let it simmer (just before the boiling point). Stir frequently until all liquid has been absorbed or until it’s the texture you want. While your oats are simmering, heat up vegan buter or coconut oil in a skillet over low – medium heat. If your pan dries up then add more oil or butter as needed. This will help prevent the bananas from sticking to the pan. In my experience, yellow ripe bananas work the best with no green or brown spots. If they’re underipe then it will take longer to cook and will not be as sweet. If they’re too ripe then they will turn to mush! Of course, we don’t waste anything in this house so if that is all you have – that is okay. Add the bananas, chopped walnuts and cinnamon to the pan and let it cook for 4-5 minutes before you flip the bananas and add your salt and syrup. If you don’t have maple syrup then you can sub coconut or brown sugar.  Once you’ve flipped your bananas, cook for another 4-5 minutes until they’re golden brown.


This cooking method for the bananas would be an excellent topping on my Fluffy Vegan Pancakes, Classic Vegan Waffles and Vegan French Toast. This oatmeal will keep for 3 days. If you decide to prep it ahead of time, it will thicken as it sits in the fridge. I would suggest reheating the oatmeal on the stovetop with a dash of plant mylk to get it rich and creamy again. Ingredients

Scale
  • 1 cup rolled oats
  • 2 cups water or plant mylk
  • 2 tsp vegan butter or coconut oil
  • ½ tsp cinnamon 
  • ¼ cup maple syrup
  • 2 bananas sliced into disks
  • 1/3 cup chopped walnuts
  • 1/8 tsp sea salt
  • Extra fruit for topping (optional)

Instructions

  1. Using a medium-size saucepan bring plant mylk or water to a boil. Add oats and stirring frequently cook until liquid has been absorbed and oats are creamy (about 8-10 minutes). 
  2. Meanwhile, heat the oil in a skillet over medium heat. Add bananas disks (face down, evenly spaced), walnuts and cinnamon. Cook for 3-5 minutes or until bananas and walnuts become golden and fragrant.
  3.  Add maple syrup and salt and simmer until mixture is incorporated and smells delicious.
  4. Dived oats into serving dish.  Top with carnalized bananas and fresh fruit (if desired).

Notes
