Welcome to Susan Cooks Vegan!

Hello Readers! My name is Susan Pratt. Welcome to my vegan recipe blog. I am so grateful you are with me on this journey.

A Bit About Me

I live in beautiful North Vancouver, BC, Canada, with my husband, Randy and 4-year-old daughter, Carrington. Being in nature makes me feel at peace and centred. You can find me in the woods behind our house foraging for wild edibles or gardening and feeding the birds in our backyard.

I have two horses and two cats. I have a beautiful Warmblood horse named Mr.Grey, a colossal Warmblood named Romeo, and two cats called Mable and Angel.

Born and raised in beautiful British Columbia,, I grew up with a forest for a playground. While I was very active, unfortunately, our family ate the Standard American Diet, which was high in sugar and fat with very little variety or nutrition. Due to this, I became overweight by the time I was in Elementary School. This was an extremely tough time in my life because I abused and bullied. With help, self-discovery and hard work, this has become a source of strength and it became the catalyst for my love of cooking nutritious food and understanding what my body needs to thrive.

How Did I Start Blogging?

Before I was a vegan blogger, I was an entrepreneur and Special Needs Educator. Working in schools and with children gave me first-hand experience observing the effects of diet and nutrition on children’s challenging behaviour and energy levels. 

This was one of the many reasons I became passionate about feeding my family healthy, nutritious meals.

What Made Me Go Vegan?

For me, the decision to go vegan was an easy one. My husband and I watched some compelling documentaries on Veganism. We learned of the adverse effects that animal products have on our bodies and the abilities that plants have to reverse disease. We are first-hand proof of that. My husband narrowly missed having a heart attack. His doctor said if he hadn’t started eating a vegan diet when he did, there would have been dire consequences. 

Yes, I Hug Trees!

Since childhood, I have had a deep love for nature, our planet and all, animals-especially horses. But then, I began to understand: the devastating impact animal agriculture has on the environment. Overfishing is killing our oceans. What the consumption of animals does to our bodies and the horrors those poor creatures endure. I could no longer turn a blind eye. As the great Maya Angelou says, “When you know better, you do better.”

At times, it can feel overwhelming! But, what can one single person do to affect change? Then, something sparked in me. I felt a need to make a difference, and that started with my number one passion, food. Our choice with our forks can change the world for the better.

Eating healthy doesn’t need to be daunting or inaccessible. You can make delicious and decadent vegan meals using items you already have in your pantry while being kind to the planet. This has made it easy to cook vegan meals for Randy, who has wholly joined me in a vegan lifestyle, and Carrington, who is a happy and thriving toddler (and broccoli eater!).
