Sweet & Salty Banana Walnut Oatmeal

A Sweet & Salty Banana Walnut Oatmeal is just what you’ve been looking for in a breakfast! I’m taking our traditional oatmeal to the next level with a decadent yet refined sugar-free recipe. Best of all, it’s quick to make!

 

Ingredients

  • 1 cup rolled oats
  • 2 cups water or plant mylk
  • 2 tsp vegan butter or coconut oil
  • ½ tsp cinnamon 
  • ¼ cup maple syrup
  • 2 bananas sliced into disks
  • 1/3 cup chopped walnuts
  • 1/8 tsp sea salt
  • Extra fruit for topping (optional)

Instructions

  1. Using a medium-size saucepan bring plant mylk or water to a boil. Add oats and stirring frequently cook until liquid has been absorbed and oats are creamy (about 8-10 minutes). 
  2. Meanwhile, heat the oil in a skillet over medium heat. Add bananas disks (face down, evenly spaced), walnuts and cinnamon. Cook for 3-5 minutes or until bananas and walnuts become golden and fragrant.
  3.  Add maple syrup and salt and simmer until mixture is incorporated and smells delicious.
  4. Dived oats into serving dish.  Top with carnalized bananas and fresh fruit (if desired).

Notes

This oatmeal will keep for 3 days. If you decide to prep it ahead of time, it will thicken as it sits in the fridge. I would suggest reheating the oatmeal on the stovetop with a dash of plant mylk to get it rich and creamy again. The microwave can dry it out.
