How To Make Vegan French Toast

French Toast is one of the ultimate breakfast options and if you don’t have a recipe in your repertoire, this is the time! I’m sharing my simple recipe for How To Make Vegan French Toast.

This French toast is soft, decadent, and scented with sweet vanilla and warm cinnamon. A typical french toast recipe includes egg, milk and flavourings. My vegan recipe uses a mixture of cashews, chia seeds and plant milk to create a creamy batter for dipping. The best type of bread for this recipe is a thicker option. This is also a great time to use any bread that may be going stale.



This better can be made ahead of time and stored in the fridge. If this mixture gets too thick then add a little more plant-based milk until it reaches the desired consistency.

Ingredients

Scale
  • 1/3 cup soaked and drained cashews
  • 2 tbsp chia seeds

  • 1 ½ cup of plant milk (I like oat milk)

  • ¾ tsp of cinnamon

  • ½ tsp of pure vanilla extract

  • 1/8 tsp of salt

  • 6-10 pieces of sliced bread (depending on type and size)

Instructions

  1. Wipe a non-stick skillet with oil or vegan butter.  Turn the heat on high to heat up the pan then reduce to medium.

  2. Dip the face of a slice of bread in the batter ensuring it is fully coated, then flip and do the same to the other side.  If you like your toast crispy do not let it get too soggy. However, if you prefer a softer middle let the bread soak in the mixture for a few seconds. Add to skillet.

  3. Repeat with other slices of bread frying 2-3 pieces at time, depending on the size of your skillet.  Fry for 3-5 minutes on each side or until they are golden brown. If they start to scorch turn down the heat.

  4. Serve with vegan butter, maple syrup and fruit.

Notes

Store leftover toast in the fridge for up to 4 days.
