Blue Unicorn Smoothie Bowl

Since I was a little girl, I’ve always loved unicorns and growing up doesn’t mean you have to lose your sense of magic and wonder! Today’s recipe is an enchanting Blue Unicorn Smoothie Bowl. I imagine that if a unicorn had a favourite food, this would be it! This smoothie bowl is fun to eat and packed with flavour and nutrients. If you remember from my Baby Blue Spirulina Smoothie, I used Blue Spirulina for captivating colour and vitamins.

Did you know? Figs have a sweet, mild flavour and are low in calories with zero fat. One large, raw fig, has just 47 calories so if you’re looking to shed pounds then figs are a great replacement for your not-so-healthy snacks (in moderation). Figs are also a great source of fibre and will aid in alleviating constipation and keeping you full for longer. They may also lower cholesterol and control your blood sugar levels.



The beautiful orange-yellow fruit in the bowl is Indian Gooseberries. These berries are also an exceptionally rich source of Vitamin C, are low in calories and have a significant number of phenolic phytochemicals, especially flavones and anthocyanins. Both of these compounds have been found to have numerous health-benefiting effects against cancer, ageing, inflammation and neurological diseases.  

Frozen bananas are key to this recipe. They are loaded with essential vitamins and minerals such as potassium, calcium, manganese, magnesium, iron, folate, niacin, riboflavin and B6!  Tip: Be sure to peel the bananas before freezing them. It is very difficult to peel once you’ve frozen them.

Not only is this beautiful bowl a treat for the eyes, but it’s also a wonder for the taste buds while fueling a healthy body with vitamins and nutrients. Bon Appetite!

Ingredients

Scale
  • 4 frozen bananas
  • 24 tbsp non-dairy milk
  • 2 tsp blue spirulina powder

Toppings:

  • Figs
  • Bananas
  • Blueberries
  • Apricots
  • Gooseberries
  • Hemp
  • Coconut flakes
  • Star sprinkles

Instructions

  1. In a high-speed blender such as Vitamix, combine bananas and 2 tbsp of non-dairy milk. Mix on low-medium until blended.  Add more milk if needed.  
  2. Add spirulina and blend well
  3. Place in a bowl and add desired toppings to create your work of art.
