How To Make a Summer Cucumber & Watermelon Salad

Summer Watermelon & Cucumber Salad pairs cooling mint and cucumber with sweet pink watermelon with a zing of fresh citrus.  The lemon dressing is bright and tangy and will be sure to wake up your taste buds.  Enjoy this bright salad as a light lunch, appetizer for top it with some Savory Baked Tofu for a delicious dinner.

Watermelons #1 Fan!

I’ve always been a huge watermelon fan. In fact, it was my #1 craving when I was pregnant with Carrington.  I couldn’t eat enough watermelon and now she loves it as much as I do. You can imagine that when the season rolls around, there is guaranteed to be one in our house which leads me to a refreshing and simple take on a summer salad – this Summer Watermelon & Cucumber Salad!

This salad reminds me of eating cold juicy triangles of watermelon on hot summer days as a young girl. I was always the first in line when my mom would cut one up. I’d have seed spitting contests with my older brother, Michael and he would always win (depending on who tells you the story ;).

Tips On How To Pick The Best Watermelon At The Store

Have you ever struggled to bring home a massive, heavy watermelon only to cut it open and find it watery or mealy and flavourless?  It’s the worst! Big or small the watermelon should feel heavy for its size.  If it feels too light it could indicate the juicy melon flesh has dried out. Nobody wants that.

Look for a creamy yellow field spot. This means that the melon has been resting on the ground undisturbed to ripen. The darker the yellow the longer it was on the vine ripening.

Pick a dull-looking watermelon. A shiny appearance indicates an underripe melon.

Knock on it with your knuckles.  Your knuckles should bounce off the melon.  The surface should be pretty hard/firm. If you get a dull thud, the flesh is soft and starting to spoil. Yuck.

Females are better!  Watermelons actually have genders. Male watermelons are long and oval and tend to be waterier. The female is more oval and is sweeter tasting. 

Brown webbing. This indicates how many times a bee touched the flower. The more pollination the sweeter the watermelon.

This simple and delicious watermelon and cucumber salad is the perfect addition to any summer spread!

Ingredients

Scale
  • 6 cups cubed ripe watermelon
  • 3 cups cucumber, seeded, cut in quarters
  • ¼ cup of mint chiffonade
  • Lemon Vinaigrette
  • 4 tbsp extra virgin olive oil
  • ½ tsp finely grated lemon zest 
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp of maple syrup or agave
  • ½ tsp of Dijon mustard
  • ¼ tsp of sea salt or to taste
  • Freshly ground pepper

Instructions

  1. Place salad ingredients in a bowl.
  2. Gently toss with lemon vinaigrette. Enjoy!

Notes

Tip: when using lemon in recipes not requiring zest. Grate the lemon and freeze the zest until needed.
