How To Make Date & Apple Pie Oatmeal

My recipe for a Date & Apple Pie Oatmeal is a breakfast that tastes just like a dessert. It’s satisfying, creamy and full of your favourite apple pie flavour.

Whole Grain Oats

The main ingredient in this dish is whole grain oats. Whole grain oats are rich in antioxidants, contain soluble fibre and can lower cholesterol levels. I’m using rolled oats in this recipe. To naturally sweeten your dish, we’re using dates. I spoke about the nutritional benefits of dates last year – they are great for blood sugar balance and contain a brain booster. Dates are an incredible source of natural sugars. You’ll find dates used as a sweetener in many vegan desserts.

How Do You Cut Your Apples?

Unlike traditional oatmeal recipes, we’re going to keep our apple whole and not chopped. Feel free to chop them if that’s what you’d like! To achieve the star-shaped center like in my images, you just need to slice the apple down the center as seen above.

Batch Cook

This Date & Apple Pie Oatmeal is a wonderful choice for batch cooking. If you don’t have a lot of time to spend cooking or simply don’t like spending a lot of time cooking then hit the “2x” on the recipe card to double up the recipe for 4 days of breakfast.

Ingredients

Scale
  • 1 cup of old-fashioned rolled oats
  • 1 cup of plant milk

  • 1 cup of water

  • ½ tsp of ground cinnamon plus a sprinkle for the apples

  • ¼ tsp of ground nutmeg

  • ¼ cup of walnuts or pecans, chopped

  • 1 pinch of salt

  • 4 tbsp of date paste (recipe here)

  • 1 tart or sweet apple sliced whole into rounds

  • 1 tsp of oil or water

Instructions

  1. Add oats, salt, cinnamon, nutmeg, walnuts or pecans and stir. Reduce heat to low.

  2. Meanwhile, heat a frying pan over medium heat.  Add 1 tsp of water or oil and place apples in the pan.  Sprinkle one side with cinnamon. Cook for 2 minutes then flip adding more water or oil to the pan if needed. Remove from heat and set aside.

  3.  Once the oats are thick and creamy, remove from heat and stir in date paste.  If the oats are too thick add a little more plant milk until it’s to your liking.

  4. Divide oats into bowls and top with apple rounds.
