Sweet & Salty Banana Walnut Oatmeal

Ingredients

  • 1 cup rolled oats
  • 2 cups water or plant milk

  • 2 tsp vegan butter or coconut oil

  • ½ tsp cinnamon 

  • ¼ cup maple syrup

  • 2 bananas sliced into disks

  • 1/3 cup chopped walnuts

  • 1/8 tsp sea salt

  • Extra fruit for topping (optional)

Instructions

  1. Meanwhile, heat the oil in a skillet over medium heat. Add bananas disks (face down, evenly spaced), walnuts and cinnamon. Cook for 3-5 minutes or until bananas and walnuts become golden and fragrant.

  2.  Add maple syrup and salt and simmer until mixture is incorporated and smells delicious.

  3. Dived oats into serving dish. Top with carnalized bananas and fresh fruit (if desired).
