Vegan Unicorn Yoghurt

Create a whimsical snack that you and your littles can’t resist – a vegan unicorn yoghurt! This healthy snack includes layers of strawberry, blueberry and blue spirulina vegan yoghurt.

It’s silky smooth, creamy and is packed with protein. This recipe contains no additives or preservatives and is ready in only 5-minutes. My recipe is naturally sweetened with fruit and maple syrup so there is no refined sugar here, making it the ultimate snack for your kiddos. This recipe does not include the probiotics like a traditional yoghurt so feel free to mix one into your batch at the end.



If you made my recipe for How To Make Coconut Yoghurt, I must note that this is not made the same way. You’ll find no coconuts here! This Vegan Unicorn Yoghurt is actually made from tofu and plant-based milk. The plus side of creating yoghurt this way is that you do not have to wait 2-days for the probiotics to work their magic. You simply add all of the ingredients into the blender and it is ready for serving.

Ingredients

Strawberry Vegan Greek Yogurt

  • 1 ½ cup of firm tofu

  • ½ cup of strawberries, chopped

  • 1 tsp of vanilla extract

  • 2 tbsp of non-sweetened plant milk

  • 2 tbsp of maple syrup

Blueberry Vegan Greek Yogurt

  • 1 ½ cup of firm tofu

  • ½ cup of blueberries

  • 1 tsp of vanilla extract

  • 2 tbsp of non-sweetened plant milk

  • 2 tbsp of maple syrup


Blue Spirulina Vegan Greek Yogurt

  • 1 ½ cup of firm tofu

  • ½ tsp of blue spirulina powder

  • 1 tsp of vanilla extract

  • 2 tbsp of non-sweetened plant milk

  • 2 tbsp of maple syrup

Instructions

For each of the flavours:

  1. Add all the listed ingredients into a blender or food processor. 

  2. Blend until mixture is smooth and creamy, scraping down the sides as necessary.

  3. Enjoy right away or store in a sealed container for up to 5 days. 

To make the Unicorn Vegan Greek Yogurt:

  1. Fill a glass jar with 1/3 strawberry yogurt, 1/3 blueberry yogurt, 1/3 blue spiralina.  Top with star sprinkles (optional).
