Blue Chia Citrus Yogurt Parfait

Start your new year off with a Blue Chia Citrus Yogurt Parfait! This recipe is a great choice for a dessert but also breakfast or brunch. If you’re on your way out to a workout class, it’s a healthy choice for something to snack on before. The blue is not only bright and beautiful but it’s also good for you! You may remember my delicious Blue Unicorn Smoothie Bowl recipe. To achieve the blue colouring, I’ve used Unicorn Superfoods blue spirulina powder.

Spirulina is loaded with nutrients and antioxidants. It contains 4 grams of protein in 1 tablespoon. According to the Unicorn Superfoods website:

1. Removing heavy metals and toxins – Spirulina can bind with heavy metals in the body and help remove them.
2. Source of Protein – As many people nowadays are choosing a vegan or vegetarian diet, this algae can be a great addition to your daily diet routine to boost protein intake.
3. May Aid in Weight Loss – Spirulina contains about 50-70% protein. When taken 30 minutes prior to a meal it can help you feel significantly less hungry therefore, you will feel fuller for longer and less likely to over indulge. Protein is highly soluble in water which means that it can be highly absorbed by your body unlike other protein-rich food sources such as meat.
4. Boosts Energy and Performance – Spirulina is known for its abundance of b vitamins which can boost energy levels. This allows you to improve training and workout results which will enable you to burn more fat. Spirulina’s antioxidant content makes it beneficial in decreasing exercise induced oxidation which leads to muscle fatigue and inability to gain muscle.
5. Can help improve digestion and bowel health – As spirulina contains chlorophyll, this helps to regularise the digestive system and promote healthy bacteria in the gut.

The base of your Blue Chia Citrus Yogurt Parfait is going to be coconut yogurt. Coconut Yoghurt contains fermented sugars and probiotics that can help regulate your body’s digestive health through healthy bacterias.  You can purchase your yoghurt storebought or do it yourself with my super simple 2-ingredient recipe on how to make coconut yoghurt. I suggest that you pre-make your pudding the night before so that the ingredients can settle in together for ample flavour and texture. The recipe keeps for 5-7 days in the fridge.

Ingredients

Scale
  • 1 cup of plant milk (almond, soy, cashew, oat)
  • 4-5 tbsp of chia seeds

  • ½ tsp of blue spirulina powder

  • 1 tbsp maple syrup

  • ¼ tsp vanilla

  • 1 tbsp orange juice

  • 1 cup of coconut yoghurt (recipe here)

  • Mandarin slices and blueberries to garnish

Instructions

  1. Once the chia pudding mixture is well combined, let it sit for 5 minutes.  Stir or shake once again to break up any clumps of chia still remaining. Cover and put the mixture in the fridge and let set for 1-2 but preferably overnight. The end result of the pudding should be nice and thick.  If it’s too runny just add more chia seeds (about 1 tbsp), stir and refrigerate for another 30mins.

  2. Assemble the parfaits.  Add one sliced mandarin to the inside of your jar. Fill halfway with blue chia pudding and top with coconut yogurt and fresh blueberries and orange slices.
