BBQ Jackfruit Tacos

The final dish for our fiesta theme is BBQ Jackfruit Tacos! Grab your Mango Lime Kombucha Margarita and Spicy Mango Salsa, sit back and enjoy the weekend ahead.

This recipe for BBQ Jackfruit Tacos is smoky, tangy and bright! This explosion of flavour will be ready in just 20 minutes and don’t worry, this recipe serves enough for seconds and thirds. If you are unable to find jackfruit that is already mixed with BBQ sauce then add 1/4 – 1/2 cup of your favourite vegan BBQ sauce to plain and drained jackfruit. I introduced you to jackfruit in my Southwest Jackfruit Quinoa Bowl and Vegan Jackfruit Stew. It is the best substitute for pulled pork.



You may notice that my tacos are rounded but not perfect. This is because I did not purchase them storebought in this shape, I use my oven rack to mould soft tacos into rounded ones so that they hold the ingredients. If you prefer to use soft shell tacos that lay flat, go ahead! You are the boss in your kitchen!

Ingredients

Scale
  • 2 packages of BBQ Jackfruit (I use Upton’s Naturals)
  • 1 tbsp of olive oil

  • 1 ½ cups of corn kernels 

  • 1 cup of shredded purple cabbage

  • 12 corn tortillas

  •  ½ cup of avocado cream

  •  ½ cup of mango salsa 

  • Cilantro and lime for garnish

Avocado Cream

  • ½ ripe avocado

  • ¼ cup of vegan mayo

  • 1 tbsp lime juice

  • Salt and pepper

Instructions

  1. Make the mango salsa and avocado cream.

  2. Heat olive oil a skillet over medium heat. Add corn and sauté for 3-4 minutes. Add BBQ jackfruit and sauté for an additional 4 minutes. Remove from heat.

  3. Carefully remove the tortillas from the oven.

  4. Fill tortillas halfway with jackfruit mixture.  Top with shredded cabbage, mango salsa, avocado cream. Garnish with cilantro

Avocado Cream

  1. Place avocado, mayo and lime juice in a small blender or food processor.  Blend until smooth and creamy. Season with salt and pepper.
