Pitaya is a super fruit also known as dragon fruit or strawberry pear. It grows in tropical regions of South America and South-East Asia. Dragon Fruit (or Pitaya) may look exotic, but its taste has been described as a sweet cross between a kiwi and a pear.   • Peanut butter
  • Strawberry Chia Seed Jam (recipe here)
  • Figs
  • Blueberries
  • Blackberries
  • Cherries
  • Red currants
  • Pumpkin seeds
  • Star sprinkles

Instructions

  1. In a high-speed blender such as Vitamix, combine bananas and 2 tbsp of non-dairy milk. Mix on low-medium until blended.  Add more milk if needed.  
  2. Add pink pitaya and blend well
  3. Place in a bowl and add desired toppings to create your work of art.
