Jazz up your morning ritual with a recipe using my two favourite ingredients, cranberries & pumpkin seed butter. Together these two are a power couple! Cranberries give you a boost of antioxidants and vitamins. The pumpkin seed butter is high in iron and protein. They work together to help your body absorb more nutrients. The vitamin C from the cranberries help absorb the iron from the pumpkin seed butter. How awesome is that?

Cranberries are an incredible fruit. We love them for their rich, ruby-redness but their sweet-tartness it’s packed with antioxidants. Cranberries are high in fibre and low in calories. They can improve digestion, reduce bad cholesterol and urinary tract infections.

Pumpkin Seed Butter

Pumpkin seed butter is a great option to keep you energized and full. It adds a whopping 10 grams of protein to your dish and is an excellent source of monosaturated and polyunsaturated fats. Pumpkin seed butter is naturally high in iron, magnesium, zinc and copper. Purchase some here or use my recipe to create your own.

Ingredients

Scale
  • 1 cup of cranberries
  • 2 peeled and frozen bananas cut into chunks
  • 2 tbsp of pumpkin seed butter (my recipe here)
  • 4 Medjool dates
  • 1 tsp of vanilla
  • ½ cup of coconut water (more if needed)

Toppings:

  • Fresh cranberries, apple stars, coconut flakes, pumpkin seeds, freeze dried berries, hemp hearts, chia seeds, snowflake candies.

Instructions

  1. Make sure to have your toppings prepped before making the smoothie base. You want the smoothie base to be frosty and thick not melted.
  2. When you have the toppings of your choice ready make the smoothie base by adding the smoothie ingredients to a high-power blender in the order listed.
  3. Secure the lid and blend starting on low speed and working up to speeds 6-7.  Use the tamper to keep the mixture moving and blend until smooth.
  4. Pour the smoothie base into q serving bowl. Add desired topping and dollop of coconut yogurt (if using).
