How To Make A Tropical Chia Seed Parfait

This beautiful Tropical Chia Seed Parfait is sweet, bright and refreshing. Vegan, gluten free and full of fruity flavors. Layers of blackberry chia seed jam, creamy chia seed pudding and a tropical mango, banana and pineapple sorbet. Enjoy as a dessert or sprinkle over my heart healthy granola for a healthy refreshing breakfast.

How To Make This Tropical Chia Seed Parfait

-Make the blackberry chia seed jam at least 4 hours before or let soak overnight. Find the recipe for Blueberry Chia Seed Jam here. Simply switch the blackberries for blueberries.



-Make the chia pudding at least 4 hours before or let soak overnight. I left mine plain but you may add any flavour you’re craving to this pudding. Find the recipe here.

-Make the Tropical Sorbet. Combine 1/2 cup frozen banana, 1/2 cup frozen mango, 1/2 cup pineapple in a high-speed blender. If the pineapple is fresh you will not need to add any liquid. If it is frozen add plant milk 1 tbsp at a time until it starts to blend.

-Layer the blackberry chia jam, chia seed pudding and tropical sorbet. Decorate with sliced figs, blackberries and edible flowers.

When I give this Tropical Chia Seed Parfait to Carrington she knows she’s getting a special treat. It’s beautiful, bright, sweet and fun to eat. As a Mom, I love giving it to her because it’s sweetened with natural sugars. It has lots of protein, antioxidants, Omega’s, calcium, vitamins and nutrients from the chia, figs, blackberries, banana, mango and pineapple.

Chia seeds pack a lot of nutrition for tiny little seeds. Did you know? Chia seeds are related to mint. Aztecs and Mayans praised them for their sustainable energy. In fact, “chia” is the ancient Mayan word for “strength”.

2 tbsp of chia seeds contains: 
Fibre: 11 grams. 
Protein 4 grams. 
Fat 9 grams (5 of which are omega 3’s). 
Calcium 18% RDI. 
Manganese: 30%
RDI. Magnesium 30% of RDI. 
Phosphorus: 27% of RDI. 

They also contain a decent amount of zinc, vitamin B3(niacin), potassium, vitamin B1(thiamine and vitamin B2).

Ingredients

  • 1/2 cup blackberry chia seed jam. Recipe here
  • 1 cup chia seed pudding. Recipe here
  • 1 banana, frozen
  • 1 cup mango, frozen
  • 1/2 cup pineapple, frozen 
  • Sliced figs, blackberries and edible flowers to garnish 

Instructions

  1. Create the chia seed jam and chia seed pudding according to the recipes. Allow 4 hours or overnight for the chia seeds to bloom.
  2. Combine frozen banana, mango and pineapple in a high-speed blender. Blend on high until a smooth consistency is achieved.
  3. Press sliced figs to the inside of a tall dessert glass. Layer blackberry chia jam, chia pudding and tropical sorbet.
  4. Garnish with sliced figs, blackberries and edible flowers
