Peaches and Cream Teff is a porridge with the superpower of the ancient grain called, teff topped with ripe summer peaches and coconut cream. If you haven’t heard of Teff you’re not alone. I recently discovered this wonderous ancient grain and have become instantly obsessed.
What Is Teff?
What is it? Teff has a mild, nutty flavor and is about the size of a poppy seed and is gluten-free. It is a grass crop grown in Ethiopia and comes in a variety of colors from white to red to dark brown. Its name is often assumed to be related to the word “lost” in Amharic – because of the tiny size
It has the highest calcium content of all the grains with a cup of cooked teff offering a whopping 123mg. That’s about the same amount as a half-cup of cooked spinach!

High Resistant Starch
Have you heard of high resistant starch? It’s a newly discovered type of dietary fibre that can benefit blood sugar management, weight control and colon health. It’s estimated that 20-40% of the carbohydrates in teff are resistant starches. In addition, teff is gluten-free and high in several minerals, particularly iron. How To Cook Teff
Cook this grain just like you would regular oats. Bring to a boil then let simmer until the liquid evaporates. I love peaches and cream together. It’s so comforting and goes perfectly with the nuttiness of the teff. Other great combinations would be apple, cinnamon and nuts, mixed berries and coconut, nut butters and cacao nibs. Fun Facts About Teff
-Just one pound of teff grains can grow an acre of teff, while 100 pounds or more of wheat grains are needed to grow an acre of wheat.
-Teff requires only 36 hours to sprout, the shortest time of any grain.
-Three thousand grains of teff weigh just one gram (½8 of an ounce).
-Teff’s protein content (around 14%) is largely easily digested albumins (similar to a vegetable version of egg whites).
-Teff is thought to have originated in Ethiopia about 4000-1000 B.C.E.
-Teff is fermented by a symbiotic yeast living in the soluble fiber on the grain’s surface (like the blush on grapes).

Ingredients
- ½ cup teff grains – I use Bob’s Red Mill.

1 cup of water
-
½ cup creamy nut, oat or coconut milk
-
2 tbsp coconut sugar or 3 Medjool dates, pitted and chopped

½ tsp cinnamon
-
1 ripe peach, sliced
-
Creamy nut, oat or coconut milk to top
Instructions
- In a small saucepan add teff, water, plant milk, coconut sugar (or dates), and cinnamon. Stir to combine.

Bring to a gentle boil then simmer for 15-20 minutes or until teff is softened and thickened to a porridge consistency.

Serve into bowls. Top with sliced peaches and more cream.
