Vegan Grilled Cheese and Basil Sandwich

Sometimes, only a grilled cheese sandwich will do! I’m sharing one of my favourite recipes for a Vegan Grilled Cheese & Basil sandwich. Imagine this… warm and crispy bread holding together melty-oogey-gooey cheese. The best part of this entire sandwich? You won’t ever get burnt bread trying to achieve the perfect melted cheese.

To create this sandwich, grab 2 slices of your favourite bread. Heat them on the grill, skillet or in a toaster and layer some vegan butter. Once you’re done, add your desired amount of my Vegan Cheese Sauce. Since this cheese is already melted, you won’t need to wait for it to be! Simply heat it up in the microwave.

Using your choice of leafy greens, layer as desired. I prefer basil for the fresh zing it gives to each dish. Make this sandwich on the side of my delicious Creamy Roasted Vegan Tomato Soup or dip it into my recipe for How To Make Ketchup!

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Spread vegan butter or oil over one side of each piece of the bread slices.  Add 2 pieces of bread butter side down, to the skillet.
  3. Spread vegan cheese sauce on each slice. Top cheese with 4-5 basil leaves. Cover with another piece of bread buttered side up.
  4. Use a spatula to gently press down the sandwich while frying.  Once the bottom bread has browned gently flip to toast the second side.  This should take about 3-4 minutes on each side.
  5. Remove from heat.
  6. Serve warm with my homemade ketchup of tomato soup.
