Star Sandwiches with Pumpkin Seed Butter

We can’t forget about our little tots & toddlers. Today’s recipe Star Sandwich with Pumpkin Seed Butter is perfect for your Weegan’s (Wee vegan) little fingers. These cute little sandwiches highlight homemade pumpkin seed butter and is packed with protein and iron. Pair it with a nutrient-rich blueberry chia seed jam, and these sandwich stars are the perfect afternoon lunch or snack.  

Pumpkin Seed butter makes for a fabulous addition to a lunch box for dipping those vegetable sticks in, (this is the perfect snack for children attending schools with nut-free policies).

Why Use Pumpkin Seed Butter


Pumpkin seed butter is a perfect replacement for any kind of nut butter because it comes from seeds rather than nuts so it can be enjoyed by people suffering from nut allergies. Pumpkin seeds are also jam-packed (no pun intended!) with all the good stuff our vegan babies need to stay glowing and healthy so these Star Sandwiches are a great choice! Another delicious way of sneaking more nutrients into your diet is by adding raw pumpkins seed butter to smoothies, oatmeal, soups and sauces, it adds a good dash of rich flavours.

Cooking Tip: Pair iron-rich foods like pumpkin seeds with foods that contain vitamin C. This helps the body absorb the iron. I pair this sandwich with an orange, strawberries pineapple slices or coconut water.

Pumpkin Seed Tips

I prefer to choose raw unsalted pumpkin seeds for this recipe.  Roasted and salted seeds would work as well however, roasting seeds, lowers their vitamin content. It’s really just a preference of taste.

Tips For Blending The Butter

When blending your pumpkin seed butter it will be hard and crumbly for the first 5-8 minutes. As the oils in the pumpkin seeds start to come out it will form a ball. You may want to stop your food processor and break it up a couple of times. Continue blending, then magically at the 15 minute mark the ball with turn to a soft butter.

How To Make These Star Sandwiches

These sandwiches are so easy to make they do not need a formal recipe. Here is the breakdown.

  1. Choose two pieces of bread.
  2. On one slice spread the pumpkin seed butter (recipe below)..
  3. On the second slice spread Blueberry Chia Seed Jam.
  4. Put the bread slices together with the spreads facing in to make a sandwich.
  5. Use a star shaped cookie cutter to cut the shape.

Ingredients

Scale
  • 2 cups of raw pumpkin seeds
  • 1 tbsp melted coconut oil
  • 1 tbsp hot water.
  • Optional additions: 2-3 tsp maple syrup, 1/2 tsp cinnamon, 1 tsp vanilla extract.

Instructions

  1. Process the raw pumpkin seeds, oil and hot water in a high power blender or food processor until you achieve a creamy consistency. Depending on the power of your blender it can take up to 15 minutes, make sure to scrape down the sides and give your blender or food processor a break if needed.
  2. Add all other ingredients and only pulse briefly.
  3. Enjoy! 

Notes

Pumpkin seed butter can be stored at room temperature for 2 weeks, or in the fridge for about 2 months

      Hi Dee! I’m glad you’re enjoying this recipe. The sandwiches will keep for about 3 days and the Pumpkin Seed Butter will last quite a while!
