Healthy Fats
One of the reasons I enjoy making smoothies is because it’s a way to pack in my healthy fats for the day. I’ve included hemp, avocado and with the salad greens, you’re sure to get a leg up on your daily nutrients. Another major plus is that Carrington loves it!
A Great Way To Use Up Your Greens
I came up with this recipe when I had noticed that my salad greens were going bad quicker than I had anticipated. They can go from fresh to a mess in the blink of an eye! I blended it up into my smoothie in my Vitamix and voila, the Power Green Mint Smoothie was born. Salad greens contain vitamin A, C, beta-carotene, calcium, folate, fibre and phytonutrients. Leafy greens are naturally low in calories, low sodium and do not contain cholesterol.
Freeze Your Fruits & Veggies
You’ll notice below that my recipe includes frozen items. Frozen is used because I want my ingredients to last longer. When my vegetables are starting to go soft or my fruit is too ripe, I cut it cup and freeze it so it doesn’t go to waste. Did you know that it adds a cold and frothy texture to your smoothie? Try it out!

Ingredients
- Handful of frozen salad greens
- 1/2 an apple
- 1 avocado fresh or frozen
- 2 frozen bananas
- ¼ cup of frozen mango chucks
- 2 tbsp of hemp hearts
- 2 pitted Medjool dates
- 2 cups of coconut water (more if needed)
- 4 mint leaves
Instructions
- Place all the ingredients in a high-powered blender.
- Blend on medium-high until a smooth consistency is achieved. If smoothie is too thick, add more coconut water.
- Pour into a glass, cup or bowl.
