What makes a baked donut a better option over a fried one? Baked donuts only need to go through the process of baking while fried donuts require excess flour and unnecessary oils that can be upsetting to your stomach. This donut recipe does not include any yeast, eggs or dairy. I had so much fun making them! Ingredients

BASIC VANILLA DONUT

  • 1 cup of All-Purpose Flour

  • 1/3 cup of cane sugar 

  • 1 tsp baking powder
  • ¼ cup of coconut oil

  • 3 tbsp of Aquafaba

  • 1 tsp of vanilla extract

  • ¼ tsp of salt

  • ½ cup of unsweetened plant milk

     

BASIC VANILLA GLAZE

  • ¾ cup of powdered sugar (more if needed)

  • 1 – 2 tbsp non sweetened plant milk, (more if needed

 

VANILLA ACAI GLAZE

  • ¾ cup of powdered sugar (more if needed)

  • 1 – 2 tbsp non sweetened plant milk, (more if needed)

  • ½ tsp of dried acai powder

  • Garnish with edible flower petals

 

LEMON DONUT

  • Replace ¼ cup of plant milk with ¼ cup of lemon juice

  • Add 1 tbsp of lemon zest

 

LEMON GLAZE

  • ¾ cup of powdered sugar (more if needed)

  • 1 – 2 tbsp lemon juice (more if needed)

  • Lemon zest to garnish

 

BLUE LEMONADE GLAZE

  • add ¼ tsp of blue spirulina to lemon glaze

CHOCOLATE DONUT

  • Add ¼ cup of cacao powder

     

CHOCOLATE GLAZE

  • ¾ cup of powdered sugar (more if needed)

  • 1 – 2 tbsp non sweetened plant milk, (more if needed)

  • 1 tbsp of cacao powder

  • Chocolate sprinkles to garnish

 

PEANUT BUTTER & JAM DONUT

  • Add 1/3 cup of fresh strawberries, finely chopped 

     

PEANUT BUTTER & JAM GLAZE

 

  • ¾ cup of powdered sugar (more if needed)

  • 1 tbsp of powdered peanut butter

  • 1 – 2 tbsp non sweetened plant milk, (more if needed)

  • Garnish with chopped peanuts and dried strawberries

Instructions

  1. Preheat the oven to 375F. Grease a donut pan if it is not silicon. Set aside.

  2. Melt the coconut oil using a microwave or in a small pot over low heat.  Allow to cool but not harden. 

  3. Using a stand mixture or mixing bowl, cream together the cooled coconut oil and cane sugar.  

  4. Add the aquafaba and whisk until combined with oil and sugar.

  5. Add plant milk, vanilla extract and additional flavors. Mix until evenly combined.

  6. Add the flour, baking powder and salt and stir gently until a smooth batter is formed.

  7. Using a small spoon, add the batter to the prepared donut pan.  Use the back of the spoon to smooth out the top.

  8. Bake for 12-15 minutes or until golden brown on top or insert a toothpick and if it comes out clean, they’re ready.

  9. Let the donuts cool for 3-4 minutes then transfer to a cooling rack.

  10. Once the donuts have cooled, make the glaze.

 To Make the Glaze:

  1. Add all the ingredients to a shallow bowl. Whisk until you have a smooth glaze. If the glaze is too thick add more liquid. If it’s too thin add more powdered sugar.

  2. Dip the top of the donut in glaze. 

  3. Add garnishes while glaze is still wet.
