Peas And Love

I enjoy cooking with colour and peas add a beautiful bright green colour and sweetness to a dish. However, if you think that peas are humble, ordinary vegetables, think again! These tiny gems carry quite a punch when it comes to nutrients and health benefits.

The high concentration of vitamins, minerals, antioxidants, and phytonutrients in peas provides important health benefits that range from keeping your eyes healthy to protecting you against certain cancers.

Peas are a good source of vitamins C and E, zinc, and other antioxidants that strengthen your immune system. Other nutrients, such as vitamins A and B and coumestrol, help reduce inflammation and lower your risk of chronic conditions, including diabetes, heart disease, and arthritis. Yay peas! Cashews

Cashews are a magical ingredient that can turn a sauce into one that is more silky, rich and creamy. Soaking them creates a softer cashew and can easily be blended. If you don’t have time to soak them overnight, just add boiling water and soak for 10-15 minutes. Learn more How To Cook With Cashews.

Spinach

Spinach is one of the most nutritious vegetables on the planet. It belongs to the Amaranth family and is related to beets and quinoa. Who knew? It is also high in carotenoids, which your body can turn into Vitamin A. Spinach contains several other vitamins and minerals including potassium, magnesium, and Vitamins B6, B9 and E. This leafy vegetable also contain Vitamin C, K1, folic acid, iron and calcium.
