What is Tahini?

Tahini is a paste made from sesame seeds. It is a staple of Middle Eastern and Mediterranean cooking. You can find it the grocery isle usually with the nut butters.

How To Get The Smoothest Creamiest Hummus

This next step is key to getting a smooth, creamy Dill Pickle Hummus. It does takes some extra time. Trust me it is worth it. The trick is you must remove the outer skin before blending. This skin is tough and does not blend well. If you do not remove the skin your hummus will still taste good. However, it will have a thicker, chunkier consistency. Once I discovered this trick I could never make hummus without removing it again.

How to Make this Hummus

  1. Remove the skin from the chick peas.
  2. Add ingredients to a food processor.
  3. Blend until smooth.
  4. Taste. Adjust seasoning if needed

Ingredients

Scale
  • 2 cups canned chickpeas, drained
  • 1/2 cup tahini
  • 1/2 cup dill pickles, chopped
  • 1/2 cup pickle brine (from the jar of pickles
  • 3 cloves garlic, chopped
  • 2 tbsp fresh dill
  • Chopped pickles, dill and parsley for garnish
  • Vegetables , crackers or pita chips for serving

Instructions

  1. Peel the skin off the chickpeas. This will make a smoother hummus.
  2. Place peel chickpeas, tahini, dill pickles, garlic cloves and pickle brine into a food proccesor.
  3. Blend until smooth, scraping the sides as needed.
  4. If your hummus is too thick add a 1tbsp of hot water until you reach desired consistency.
  5. Taste. Add salt if desired.  Garnish with chopped pickles, fresh dill and parsley
