Carrot Cake Baked Oatmeal

Carrot cake for breakfast? Yes, please! This Carrot Cake Baked Oatmeal is a recipe that you can feel good about eating any time of the day. I’ve eaten it as a meal or a snack and served it to my guests for brunch. Top it with extra maple syrup or whipped cream if you’re looking for a sweeter taste.  

What I enjoy most about this carrot bake baked oatmeal is that it tastes every bit like carrot cake but without the fats, egg, dairy and refined sugar.  If you’re gluten-free, simply substitute your oats. If you’re like me and don’t have too much time, then this recipe will be your best friend! From start to finish this recipe takes less than an hour.



Picky little eaters will be none the wiser that this is actually good for them! Loaded with whole grains and protein to keep you full all day! Slice this ahead of time and pack it for snacks on the go or sneak a little something sweet at home.

Ingredients

Dry Ingredients

  • 4 mediums size carrots (shredded)
  • 2 cups whole grain oats
  • 1/3 cup of hemp hearts
  • ¼ cup shredded coconut (optional)
  • 1 tsp baking soda
  • ½ cup chopped apricots or dates or raisins
  • ¼ cup chopped walnuts
  • 1/3 cup of coconut sugar
  • 1 tsp all spice
  • 1 tsp clove
  • 2 tsp cinnamon
  • ½ tsp salt

Wet Ingredients

  • 2 cups of non-dairy milk (I use almond)
  • ¼ cup of maple syrup
  • 2tsp vanilla
  • Flax egg: Mix 2 tbsp ground flax with 6 tbsp water. Set in fridge for 5mins to set

Instructions

  1. Preheat oven to 350 degrees.
  2. Make flax egg. Set in fridge.
  3. Oil a medium-sized baking dish with vegetable oil or cooking spray.
  4. In a large bowl add dry ingredients. Mix well.
  5. In a separate smaller bowl mix together wet ingredients. Add wet ingredients to dry.
  6. Pour batter into baking dish. Bake for 25-30mins or until the top is golden brown.
  7. Let cool for 10mins (if you can wait).

    Where do you get coconut sugarl & flax to make flax egg?

      Hi Janet! I buy my coconut sugar and flaxseed from Wholefoods. The coconut brand is called Wholesome and you can purchase ground flax. However, I find that whole flax is actually cheaper! You just need to grind it yourself with a Vitamix or food processor.
