How To Make Cactus Soy Curl Fajitas

What are Soy Curls?

Soy Curls are a versatile vegan protein that can be used in a variety of dishes like this No Bake No Chicken Pot Pie recipe.

If you’ve never had soy curls before, they’re basically dried soybeans that have been rehydrated, stripped of their hulls, and shaped into curls. They have a meaty texture and take on whatever flavor you cook them with so they’re perfect for fajitas.

In this recipe, we’ve used them to create delicious vegan fajitas that will satisfy any craving. The best part about these fajitas is to cook the soy curls, simply rehydrate them with hot water or vegetable stock, drain and sauté along with the peppers and onions. Could it be any easier?

Ingredients

Fajita Seasoning

  • 1/2 tablespoon chili powder
  • 1 tablespoon ground cumin
  •                      1 teaspoon garlic powder
  •                      1/2 teaspoon paprika
  •                      1/2 teaspoon oregano
  •                      1/2 teaspoon salt
  •                      1/4 teaspoon pepper
  •        1/8 teaspoon cayenne pepper (optional)

Instructions

  1. In a small bowl, mix together spices for the fajita seasoning. Set aside.
  2. Place soy curls in a large bowl. Pour over either hot water or hot vegetable stock (preferred) until soy curls are covered. Add more liquid if needed. Let soak for 5 minutes or until soy curls are soft. Once soft use a sieve or colander to drain. Reserve the liquid for soups or sauces (optional).
  3. Meanwhile, thinly slice onions, peppers and cactus (if fresh). If using jarred cactus remove one cup reserving the liquid.  
  4. Heat a large pan over medium low heat. Add 1 tbsp vegetable oil to pan. Add soy curls and cook for 5 mins stirring occasionally. Once soy curls are browned sprinkle over fajita seasoning. Stir to combine. Add onions,  peppers and fresh cactus (if using). Cook for 3-4 minutes stirring occasionally or until vegetables have soften. If using jarred cactus add to pan and cook until heated through, stirring occasionally.

 Assemble Your Fajita.

  • If you enjoy your tortillas warm a trick I use is, I heat mine up quickly by putting them in the microwave for 30 seconds with a wet paper towel.
  • Add 1/2- 1 cup of filling to your tortillas (depending on the size of your tortillas) and optional fillings if you prefer.

Notes

Store leftovers covered in the refrigerator for up to 3 days. Freeze for up to 3 months.
