Vegan Gingerbread Hot Chocolate

Get into the holiday spirit with a warm cup of Vegan Gingerbread Hot Chocolate. Hot chocolate is a winter staple at our house. I have such fond memories of drinking a hot cup on a cold day. It was one of the beverages that I missed most when I removed dairy from my diet. The great thing about a plant-based diet is there is a substitution for everything.

I’m putting my own twist on a classic with the addition of gingerbread. This takes your traditional hot chocolate recipe up a notch. Sip on a creamy, spicy and velvety smooth treat that tastes better than store-bought, I swear! Your guests will adore it and because you’ll have the ingredients on hand, you can make a cup whenever the mood strikes.

This recipe includes chocolate and cocoa. Both are rich in antioxidants and the addition of molasses is enriched with iron, calcium, magnesium, Vitamin B6 and selenium. When purchasing your cocoa powder, be sure to purchase it from the bulk section or read that the label is 100% cocoa. Some cocoa powders can include a milk powder for texture.

Ingredients

Scale
  • 6 cups of plant milk 
  • ¼ cup of cocoa powder
  • 2 tbsp molasses
  • ¼ cup of maple syrup or to taste
  • 3 tsp ground ginger
  • 2 tsp ground cinnamon
  • ½ grated nutmeg
  • ¼ tsp all-spice
  • 1/3 cup of good quality chopped vegan chocolate or chips

Instructions

  1. In a medium size saucepan combine the plant milk, cocoa powder, maple syrup, molasses, ginger, cinnamon, nutmeg and allspice.
  2. Cook over medium heat, stirring occasionally until the sugar, cocoa powder and spices are dissolved and the plant milk is steaming, about 5mins. Do not let the mixture come to a boil.
  3. Whisk in the chopped vegan chocolate a little at a time until smooth.
  4. Pour into mugs and garnish with coconut whipped cream.
