Hidden Veggie Chocolate Pudding is a superfood reinvention of a childhood favorite and a mother’s secret weapon for picky eaters. This recipe requires no cooking at all and is ready to eat once you’ve mixed it in your food processor. I do prefer to chill mine in the fridge but I fully understand if you just can’t wait.

What’s The Difference Between Cacoa or Cacao Powder?

Cocoa and cacao are often confused for one another. They look similar and are spelled almost identical but there is indeed difference. Most people are familiar with cocoa powder. It’s commonly used for baking or in hot chocolate

Recently, cacao is rising in popularity as people begin to become more health conscious and shift towards more natural and vegan diets. So what is the difference between cocoa and cacao (besides the spelling)? The answer is in the way it’s heated. 

Both cocoa and cacao powder begin as beans from the cacao plant. They have been separated from the fatty part of the bean known as cocoa butter. These beans are harvested and fermented to develop flavour and texture. The more common cocoa is processed at a much higher temperature and often contains added refined sugar and dairy. The result is a less bitter, slightly darker powder that has lost some of it’s nutritional value.

On the other hand, cacao powder is made from fermented beans that have not been roasted. The beans are processed at low temperatures and then milled into a powder. The result, is a powder that’s bitter in taste and higher in nutritional content. It is often packaged as vegan as it has been minimally processed with no additives.

Can This Recipe Be Made Without All Of The Veggies?

Yes! If you don’t have all the veggies or not the right combination you can substitute one for another. This pudding is an adaptation of my recipe for Chocolatey Avocado Pudding. If for any reason, you cannot have carrot or sweet potato or don’t have them in the fridge but you would still like a chocolatey treat, you can try this recipe instead.

Ingredients

Scale
  • 1 small or 1/2 large sweet potato, peeled and roasted 
  • 1 cup carrot, peeled and roasted
  • 1 large avocado
  • 1/2 cup high quality cacao
  • 1015 Medjool dates, pitted and soaked in hot water for 30 mins or until soft
  • 4 tbsp plant milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Toppings: chopped pistachio, edible flowers

Instructions

  1. Add all ingredients to a food processor or a blender. Blend on low until very smooth and creamy scraping down the sides as needed. Taste and add more dates if you like the pudding sweeter.
  2. If pudding is too thick add plant milk 1 tbsp at time until desired creaminess is obtained.
  3. Spoon into serving dish. Garnish with chopped pistachios and edible flowers (optional).
  4. Can be enjoyed immediately. Best if refrigerated and enjoyed cold.

Notes

Pudding will keep in a covered container in the fridge for up to 5 days

      Pssst ๐Ÿคซ- Another trick I use is, I blend veggies and beans into my daughters “plain” tomato sauce. ๐Ÿ˜‰
