Hidden Veggie Chocolate Pudding is a superfood reinvention of a childhood favorite and a mothers secret weapon for picky eaters. Rich, creamy and chocolatey this pudding is vegan, naturally sweetened, gluten-free with the bountiful benefits of cacao powder.

Ingredients

  • 1 small or 1/2 large sweet potato, peeled and roasted 
  • 1 cup carrot, peeled and roasted
  • 1 large avocado
  • 1/2 cup high quality cacao
  • 1015 Medjool dates, pitted and soaked in hot water for 30 mins or until soft
  • 4 tbsp plant milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Toppings: chopped pistachio, edible flowers

Instructions

  1. Add all ingredients to a food processor or a blender. Blend on low until very smooth and creamy scraping down the sides as needed. Taste and add more dates if you like the pudding sweeter.
  2. If pudding is too thick add plant milk 1 tbsp at time until desired creaminess is obtained.
  3. Spoon into serving dish. Garnish with chopped pistachios and edible flowers (optional).
  4. Can be enjoyed immediately. Best if refrigerated and enjoyed cold.

Notes

Pudding will keep in a covered container in the fridge for up to 5 days
