Spinach is one of the most nutritious vegetables on the planet. It belongs to the Amaranth family and is related to beets and quinoa. Who knew? It is also high in carotenoids, which your body can turn into Vitamin A. Spinach contains several other vitamins and minerals including potassium, magnesium, and Vitamins B6, B9 and E. This leafy vegetable also contain Vitamin C, K1, folic acid, iron and calcium.

-Soak cashews in boiling water for 10mins
-Place all ingredients into a high-speed blender and blend until creamy
-Pour mixture into a preheated skillet along with fresh peas or defrosted frozen peas
-Heat for 3-4 minutes, stirring occasionally

Ingredients
- 1 cup peas fresh or frozen
- 3 cups raw spinach or 1 package of frozen
- 1/3 cup raw cashews
- 4 tbsp Nutritional yeast
- 2 cloves of garlic
- Juice of ½ a lemon or 3 tbsps of juice
Instructions
- Soak cashews overnight if you have a weak blender or in boiling water for 10mins if you have a high-speed blender.
- Place all ingredients listed into a blender and blend until smooth creamy scraping the sides if needed.
- Heat a skillet over medium heat. Pour mixture into a pan along with fresh peas or defrosted frozen peas.
- Heat for 3-4 minutes stirring occasionally.
- Season with salt and pepper to taste.
- Enjoy over your favourite pasta or use on top pizza or bruschetta.
Notes
This Green Spinach Vibrant Pea Pesto Sauce will keep in a sealed container for 4 days in the fridge or freeze for up to 3 months.
