Roasted Radish Pesto Linguine

What good would my Radish Leaf Pesto be if we didn’t turn it into a Roasted Radish Pesto Linguine! This is a pasta unlike any you’ve tried before. As mentioned in my previous recipe:

Radish leaves contain more nutrients than the entire radish bulb itself. They are host to minerals like iron, calcium, folic acid and vitamin C. These are essential minerals for many of our bodily functions. Radishes contain high iron content and can aid in detoxifying the body.

How To Make Radish Leaf Pesto

Radish flavour transforms when heated from strong and peppery to sweet and juicy. Perhaps you can roast some radishes as your side dish instead of potatoes? The toppings of my linguine dish that look like tomatoes are actually radishes.


Linguine noodles are one of my favourite types of noodles. In fact, I will sometimes sub in linguine noodles for spaghetti noodles based on the flat base that captures more sauce. Roasted Radish Pesto Linguine

Ingredients

Scale
  • 250ml of dried linguine pasta
  • 80ml of radish pesto

  • 6 radishes halved

  • 1 tsp of olive oil

  • Salt and pepper to season

Instructions

  1. Meanwhile cook pasta as per package directions. Drain the cooking water and leave the hot pasta in the pot.

  2. Add pesto and still well until evenly coated.

  3. Divide pasta into serving bowls and top with roasted radishes.
