Sunny hot days ahead call for a Light Refreshing Leaf Lettuce & Vegetable Cube Spa Salad. Revive parched skin and revitalize the senses with this simple eye catching salad made with crisp, green leaf lettuce, cubes of colorful vegetables topped with pumpkin and black sesame seeds. Serve with oil & vinegar, your favorite dressing or my Lemon Vinaigrette.

Enjoy this salad on its own for a bright, light snack or as a first course before my Spinach Bolognese with Zoodle recipe. If you would like to make this salad more of a meal, add some beans, or my Savory Baked Tofu on top.

What You Need To Make A Light & Refreshing Leaf Lettuce & Vegetable Cube Spa Salad


Unlike tossed salads or bowls this is a dish in which each ingredient stands alone and shines. Sometimes simple is best, don’t you agree? Ingredients needed to make this salad are:

-Leaf lettuce

-Squash such as Acorn or Butternut

-Jicama

-Watermelon Radish

Pumpkin Seeds

Black Sesame Seeds

What Is Watermelon Radish & Where Can I Find It?

Like Cinderella before her transformation, the exterior of a watermelon radish is modest at best and drab at worst. But open it, and all is magic: the interior of this root vegetable practically sparkles with hot pink and vibrant orange, turning heads as it suddenly appears as the belle of the ball.

Watermelon radishes are an heirloom variety of daikon radishes and originated in China, where they are called shinrimei. They’re a root vegetable and member of the Brassica family, which also includes arugula, broccoli, and cabbage. 

Why Is It Called Watermelon Radish?

The watermelon radish doesn’t actually taste like watermelon. Instead, the flesh, which is green around the exterior with a deep pink to bright red center, bears quite a resemblance to its namesake. 

Watermelon radishes are larger than regular radishes and can range from the size of a golfball to that of a softball. They’re firm and crisp with a mild taste that’s a blend of slightly peppery and slightly sweet. Source:www.thekitchn.com

Where Do I Find It?

Find Watermelon Radish in the produce section of your grocery store usually near the root vegetables such a celery root, turnip and rutabaga. If your store doesn’t carry it or it is out of season replace it with regular radish, pink dragonfruit (for color) or a rainbow purple or red carrot.

Ingredients

Scale
  • 68 leaves, leaf lettuce, washed and dried
  • 1/4 cup butternut squash peeled and cut into 1/4 inch cubes
  • 1/4 cup jicama peeled and cut into 1/4 inch cubes
  • 1/4 cup watermelon radish peeled and cut into 1/4 inch cubes
  • 1 tbsp black sesame seeds
  • 2 tbsp pumpkin seeds

Instructions

  1. Peel and cube the vegetables.
  2. Lay leaf lettuce on a plate overlapping slightly.
  3. Add cubes of vegetables in groups of three
  4. Sprinkle over black sesame and pumpkin seeds
  5. Serve with oil and vinegar or your favorite salad dressing. 

Notes

Pre-cut your vegetables and store in cold water for fast and easy assembly.
