Celebrate summer with these Blackberry Coconut Lime Popsicles. They are a creamy, sweet coconut frozen treat with swirls of bright, tangy blackberries and citrus. These naturally sweetened healthy pops are irresistible and use only four ingredients. They are a must-have summer delight in my house; if you make these popsicles once, they will also be a staple in your home.
What You Need To Make these Four Ingredient Blackberry Lime Coconut Popsicles
- 1 can full-fat coconut milk
- 4 tbsp pure maple syrup, agave or monkfruit sweetener (more or less to taste)
- 6 cups blackberries
- 4 tbsp pure maple syrup, agave or monkfruit sweetener (more or less to taste)
- Juice and zest from 2 limes
Of course, you can’t make popsicles without a mold. Here is a popsicle mold similar to the one I use. I love that it comes with wooden sticks instead of plastic. It makes me feel like I bought these sweet delights from the ice cream truck as I did in childhood. However, these popsicles have no artificial colors or ingredients.
Blackberries
One of my favorite childhood memories is picking wild blackberries with my family in our back lane. I would stay out in the back lane for hours battling the thorns and putting as many berries in my mouth as I did in the bucket. My Mom would make jars of blackberry jams with all the berries we picked. If you have extra blackberries try using them in place of blueberries in my Blueberry Chia Seed Jam.

Blackberries contain a wide array of important nutrients including potassium, magnesium and calcium, as well as vitamins A, C, E and most of our B vitamins. They are also a rich source of anthocyanins, powerful antioxidants that give blackberries their deep purple colour.
Tips For Getting The Most Juice From Your Limes
Have you ever cut open a lime and the inside was like sawdust? I have a few tips for you to get the most juice out of that lime.
–Soften The Skin. Use the heal of your hand and using a lot of pressure roll the lime around on a hard surface. This will break up the membranes and release the juice.
–Heat In The Microwave. Microwave for 15 second to soften the rind and the flesh making them easier to squeeze.
–Don’t Store Limes On The Counter. Limes left out at room temperature will gradually lose their moisture and their rinds will become hard.

Ingredients
- 1 can full-fat coconut milk
- 4 tbsp pure maple syrup, agave or monkfruit sweetener (more or less to taste)
- 6 cups blackberries
- 4 tbsp pure maple syrup, agave or monkfruit sweetener (more or less to taste)
- Juice and zest from 2 limes
Instructions
- Add blackberries to a blender and blend until smooth. Alternativly mash blackberries with a potato masher. If seeds are a concern strain the mixture using a metal sieve or milk nut bag.
- Mix together maple syrup or sweetener of choice. Adjust to taste.
- Zest and juice 2 limes *See tip in post
- Mix lime juice, zest, coconut milk and maple syrup. Taste and adjust sweetener if needed.
- Carefully added blackberry and coconut milk mixture to popsicle molds, alternating to create a marble effect
- Freeze for at least 4 hours, ideally overnight.
- To enjoy leave at room temperature for 15 minutes or run the mold under hot water until the popsicle releases.
Notes
* Zest the limes before juicing
*Use any leftover coconut milk or berry puree for smoothies.
