Let’s Make Creamy Coconut Marbled Popsicles

These Creamy Coconut Marbled Popsicles are stunningly beautiful and summery sweet. Pretty swirling pastel colors, these ice pops are creamy and decadent bursting with coconut flavor. With only 4 ingredients these Marbled Coconut Popsicles are easy, quick and essential for summer fun!

A Healthy Summer Treat

Cool off on a hot day with a popsicle you can feel good about eating. Because they  are low in sugar and naturally sweetened with maple syrup I feel good about giving these to our daughter, Carrington. I love using coconut milk because of the healthy fats it adds to family’s diet.


What is Coconut Milk?


Coconut milk is made by grating flesh from a brown coconut, soaking it in water and then straining it to produce a milk-like consistency. It can benefit health in several ways, such as by stimulating weight loss and lowering cholesterol. Coconut milk should not be confused with coconut water, which is found naturally in immature green coconuts. One cup of coconut milk contains:

  • Protein: 5 grams
  • Carbs: 13 grams
  • Fiber: 5 grams
  • Vitamin C: 11% of the RDI
  • Folate: 10% of the RDI
  • Iron: 22% of the RDI
  • Magnesium: 22% of the RDI
  • Potassium: 18% of the RDI
  • Copper: 32% of the RDI
  • Manganese: 110% of the RDI
  • Selenium: 21% of the RDI

How to Make Creamy Coconut Marbled Popsicles

It took me a couple of tries to get these popsicles just right.  The secret to a smooth and decadent treat is to thoroughly blend the coconut milk.  Full fat coconut milk separates in the can.  If not blended well the popsicles will contain small lumps of coconut fat throughout.

If you want to enjoy the popsicles on the same day make them in the morning so they will be ready by the afternoon.

You can use any popsicle mold. I prefer the one linked here. Its silicon and makes it very easy to get the ice pops out.

Can I Make Substitutions?

I love butterfly pea powder and pink pitaya (also known as dragon fruit) for its health benefits and beautiful color.  If you don’t have any you can order here or substitute fruit for the powder. Add the fruit to the blender along with the coconut milk and maple syrup in place of the powder. Blueberries would work well to replace the blue butterfly powder and raspberries or strawberries would work in place of the pink pitaya.

Ingredients

Scale

2 ½ cups full fat coconut milk

23 tbsp maple syrup(or to taste)

½ tsp blue butterfly pea powder

½ tsp pink papitya powder

Instructions

1.    Option to use a blender or bowl and handheld blender

Combine 1/3 of the coconut milk with blue butterfly pea powder and 1 tbsp maple syrup. Blend until thoroughly combined.  Fill popsicle molds 1/3 of the way up. Freeze for 30mins without the popsicle sticks.

Blend 1/3 plain coconut milk with 1 tbsp maple syrup. Fill popsicle molds 1/3 way. Freeze for 30mins without the sticks.

Blend the remaining coconut milk with pink papitya powder and maple syrup. Fill popsicle mold to the top. Insert the popsicle stick. Bring it up and down 4 times to create the marbling effect.

Freeze for 3-4 hours or overnight

To remove popsicle gently place the bottom of the mold under running hot water for 1 minute or until popsicle releases.

 

 

 

Notes

Blend thoroughly to avoid lumps of coconut cream throughout.
