How To Make Eggnog – No Egg and No Nuts

‘Tis the season to create the most festive beverage of all, Eggnog with no egg and no nuts! Eggnog has a creamy texture, warm nutmeg, vanilla, ginger and cinnamon. It’s a drink that makes me think of sleigh rides and snowmen. I enjoyed the taste of eggnog as a child but did not like knowing that I was drinking raw egg, as I’m sure a lot of you don’t either! So, I’m sharing my recipe for eggnog that doesn’t use any egg.

The first alternative to eggnog that I discovered was almond nog. I jumped for joy when I realized that there was such a thing and not only that but something that I could make at home. Most homemade egg-nog recipes include cashews as the cream base but if you can’t eat nuts or don’t have a high-powered blender (Dear, Santa. Wink wink) then this recipe is for you! I’ve created a recipe that doesn’t include any nuts at all and can be whipped up faster than any other eggnog recipe out there.

How To Make A No Egg Eggnog

Ingredients

Scale
  • 4 cups of almond or non-dairy milk
  • 1 ½ tsp of cornstarch 
  • ½ of ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 6 tbsp of maple syrup
  • 1 vanilla pod, seeds only or 1 tsp of vanilla extract
  • Dash of whiskey or rum (optional)

Instructions

  1. In a medium sized saucepan, whisk together all the eggnog ingredients, ensuring there are no lumps of cornstarch remaining.
  2. Bring to boil whist whisking and cook for 2-3 mins until thickened slightly.  Remove from heat. Add alcohol at the end if using
  3. Serve hot or cold.
