I’m upping your breakfast sandwich game with my recipe for a Vegan Chickpea Waffle BLT Sandwich! This vegan BLT recipe is savoury, smoky and of course, delicious while keeping the textures of a traditional BLT.
The Chickpea Waffle is a fan favourite in our household. Using the same ingredients as my Classic Waffle recipe, all you need to do is add chickpea flour to the mix, and voila!
Why Use Chickpea Flour?
Chickpea flour is high in protein, fibre and micronutrients while being low in carbohydrates and calories. Half a cup of chickpea flour contains an impressive 11 grams of protein, 5 grams of fibre, and nutrients. This is your healthy spin on a classic waffle.
How To Make Chickpea Waffle BLT Sandwich
- Make the Rice Paper Bacon (if you don’t already have some)
- Mix ingredients for the Chickpea Waffle. Tip: If you’re in a rush make the batter the night before and store in the fridge for a quick hot breakfast.
- Cook the waffle. This is the waffle iron I use. Note: I make a very small commission, at no cost to you, for anything purchased through my site.
- Assemble your sandwich.
Top your Chickpea Waffle BLT Sandwich with my recipe for Rice Paper Bacon. Altogether, this sandwich does take a few extra steps but trust me, it is worth it! I enjoy adding a salty pickle to my BLT sandwiches. It gives a little extra tang to each bite.
Tip For A Quick Breakfast
Store your extra waffles in the freezer and toast in the toaster for a quick and easy waffle when you’re in a hurry. I always double my recipe so I’ll have extra waffles. Carrington loves them for breakfast or I’ll cut them up into strips and they make a healthy snack

Ingredients
- 2 Vegan Chickpea Belgian Waffles

8-12 slices of fresh red tomato

16 small leaves of iceberg lettuce

8 strips of Miso Maple Rice Paper Bacon

4-6 tbsp of vegan mayo
-
Salt and pepper
-
Pickle to garnish or add to sandwich (optional)
Vegan Chickpea Waffle Recipe
Prep time: 5mins Cook time: 10 mins Yield: 4 waffles
- 1 ½ cups of all-purpose flour

1 ½ cups of chickpea flour

1 tbsp coconut sugar
-
1 tbsp baking powder
-
½ tsp salt
-
3 cups of oat milk
-
4 tbsp canola oil
Instructions
- Assemble sandwich. Spread vegan mayo on 2 waffle triangles. Top one piece with Miso Maple Rice Paper bacon (break piece in half if it’s too long), slices of tomato, salt and pepper and lettuce leaves. Top with other half of Belgian waffle and serve with a pickle on the side!

Vegan Chickpea Waffle Recipe

Pre-heat waffle iron

In a medium sized bowl, sift flour and add baking powder, salt and coconut sugar.

Add non-dairy milk, coconut oil and vanilla.

Stir with a hand whisk to remove any lumps. Batter should be thin.

When the waffle iron is heated appropriately pour in enough batter to cover but not to overflow. Close the machine.

Cook for 5-7 minutes or until golden and crispy
