Ingredients
Dry Ingredients
- 4 mediums size carrots (shredded)
- 2 cups whole grain oats
- 1/3 cup of hemp hearts
- ¼ cup shredded coconut (optional)
- 1 tsp baking soda
- ½ cup chopped apricots or dates or raisins
- ¼ cup chopped walnuts
- 1/3 cup of coconut sugar
- 1 tsp all spice
- 1 tsp clove
- 2 tsp cinnamon
- ½ tsp salt
Wet Ingredients
- 2 cups of non-dairy milk (I use almond)
- ¼ cup of maple syrup
- 2tsp vanilla
- Flax egg: Mix 2 tbsp ground flax with 6 tbsp water. Set in fridge for 5mins to set
Instructions
- Preheat oven to 350 degrees.
- Make flax egg. Set in fridge.
- Oil a medium-sized baking dish with vegetable oil or cooking spray.
- In a large bowl add dry ingredients. Mix well.
- In a separate smaller bowl mix together wet ingredients. Add wet ingredients to dry.
- Pour batter into baking dish. Bake for 25-30mins or until the top is golden brown.
- Let cool for 10mins (if you can wait).

Hi Janet! I buy my coconut sugar and flaxseed from Wholefoods. The coconut brand is called Wholesome and you can purchase ground flax. However, I find that whole flax is actually cheaper! You just need to grind it yourself with a Vitamix or food processor.
