These 3-Ingredient Energy Bars are a staple in my house! I’m always looking for ways to use up all the bananas I have left on the counter and I sometimes miss the small window of time in which they are perfect to eat on their own – Just past the green and not too ripe stage. They very quickly change from that to super sweet and mushy in the blink of an eye.
These bars are ridiculously easy to make and only requires one bowl! They make for a filling breakfast or on the go snack or meal. This recipe is plant-based and free of dairy, wheat, added sugar, or oil.
The 3-ingredients in these energy bars make for a packed nutrient option. The banana is a simple sugar; oats are complex carbs and the peanut butter is fat and protein. I eat these energy bars a pre-workout fuel before hitting the gym and I bring them with me to the stable. They give me extra energy to ride my horse but aren’t too filling. The last thing I want is to feel sluggish and bloated when I’m bouncing around and flying over fences!
Feel free to add any extras like nuts or dried fruit. I’m excited to see how you make them your own at your house!

Ingredients
- 4 ripe bananas
- 1 1/2 cup of whole-grain oats
- 1/2 cup of smooth peanut butter
Instructions
- Pre-heat oven to 350 degrees. Ensure rack is in the top middle position.
- Line a 9×9 pan with parchment paper.
- In a medium bowl, mash bananas with a fork until smooth
- Add oats and peanut butter and stir until a smooth batter forms.
- Pour into pan
- Place in oven. Bake for 25-28 mins or until golden brown on top.
