Vegan Celery Root & Apple Soup

Fall is a prime time for soup recipes! This Vegan Celery Root & Apple Soup will be a great addition to the roster and you’ll surprise yourself with how much you’ll enjoy it! Celery Root is also known as Celeriac and I’m sure you’ve seen it in the grocery store and walked right passed it. It’s not an attractive looking vegetable in the least but is one of my favourite veggies!

Be sure to peel the root as you would a potato! When cooked, it becomes beautifully soft and creamy with a milk celery flavour. In the fall, the energy of the plant moves down to the root and the stalks become dry and bitter. Use these stalks in vegetable stock instead of eating them raw.



Celeriac is a versatile ingredient. Not only can it be used in this Celery Root & Apple Soup but also as a replacement for potato with mashed potatoes, roasted in root vegetable medleys and sliced thin and roasted for sandwiches or salads.

Vegan Celery Root and Apple Soup

Ingredients

  • 6 cups of celery root also known as celeriac (about 3 medium-sized), peeled and cut into 1-inch chunks.
  • 2 tbsp olive oil plus more for garnish
  • 1 small white onion coarsely chopped
  • 2 cloves of garlic, finely diced
  • 2 tart apples (such as granny smith), peeled and cut into 1-inch pieces 
  • 1 tsp of sea salt (plus more to taste)
  • 4 cups of water or veggie stock.

Instructions

  1. Heat oil in a saucepan, over medium heat. Add onion and garlic and sauté until translucent.
  2. Add celery root, apple, sea salt and water or stock.
  3. Bring to a boil then simmer on low for 20 mins or until celery root is fork-tender.
  4. Using a handheld blender, blend until smooth. Alternatively, you can pour the mixture into a Vitamix (use caution because it’s hot) and blend until smooth.
  5. Spoon into a bowl and garnish with a swirl of olive oil, vegan crouton or sautéed apples.
