What Is In These Raw Salted Caramel Brownie Bites
Cocoa powder —The star of these raw brownie! A few of its health benefits are that it contains 40 times the antioxidants of blueberries. Buy the best quality cocoa powder you can and make sure it’s unsweetened as well!
Walnuts — You want to use roasted unsalted walnuts in these raw vegan brownies for the best taste and texture. The walnuts make these brownies a little sturdier and add a slightly nutty undertone. If you don’t have any walnuts on hand or are allergic, you can use another roasted unsalted nut, like cashews, pecans or peanuts.
Dates — Natures caramel! Dates are also high in antioxidants, fibre and boost brain and bone health. For this brownie recipe, you want to get your hands-on pitted Medjool dates. Most grocery stores sell them now, which is great or you can buy them here.

These Two Bite Raw Salted Caramel Fudge Brownies are nutritious, gluten-free, refined sugar-free and ooey-gooey, fudgy and chocolatey.

Ingredients

2 ¾ cup of chopped pitted dates

1 ½ cup of walnuts

¼ maple syrup

¾ cup cacao powder

Good pinch of Himalayan or sea salt
Topping:

2/3 cup of coarsely chopped pitted dates

½ tsp of Himalayan or sea salt
-
1 tbsp of maple syrup
-
3-4 tbsp water
-
Edible flowers (optional)
Instructions
- Put the nuts in a bowl, cover with hot water, and let soak for 2 hours or overnight.

Lightly grease a miniature muffin tin.

Drain the nuts and pat dry with paper towels, then transfer to a food processor and process briefly until chopped. Remove half the nuts and set aside for later.

Continue to process the remaining nuts until finely ground. Add the dates, maple syrup, cacao powder and salt. Process thoroughly until it forms a thick paste. You may have to scrape down the mixture a few times until it reaches the desired consistency. Add the reserved chopped nuts and pulse briefly until just combined.

Spoon brownie mixture into the muffin tin, pressing firmly. Alternatively, if you don’t have a mini muffin tin you can from balls by hand and press down the top making a flat surface for the caramel topping.

To make the topping, wipe out the food processor, add the dates and salt maple syrup and 3 tbsp of water. Process until it becomes a paste adding one more 1tbsp of water if necessary, to form a spreadable paste.

Lift brownies out of the muffin tin and spread over the caramel topping. Top with edible flowers (optional).
