Move over, Starbucks. There’s a new drink in town. Matcha Pink Pitaya Bubble Tea is sweet, slushy, pink, green and delicious.
I could seriously drink bubble tea every day. Unfortunately, the vast majority of bubble teas out there are not vegan-friendly because they contain dairy milk or creamer. But have no fear, because I’ve got the perfect recipe for a vegan green matcha pink pitaya bubble tea that is just as delicious as any other kind. So gather up your supplies and let’s get started!
What is Bubble Tea and Where did it Originate?
Bubble tea, also known as boba tea, milk tea, black pearl tea, tapioca tea, and zhen shu nai cha is a type of Taiwanese tea that has become popular all over the world. It is made by adding tapioca pearls, or “bubbles”, to black or green tea. Bubble tea originated in Taiwan in the 1980s and has since become a global phenomenon and has become increasingly popular around the world and loved for its chewy texture.
The chewy tapioca pearls are made from partially cooked tapioca flour, a starch extracted from the cassava root. Boba is gluten-free and flavorless and can be added to both hot and cold drinks.
How to Make a Matcha Pink Pitaya Bubble Tea
If you know how to make a smoothie like this Strawberry Smoothie Surprise, making a slushy bubble tea will be easy peasy. To make your own beautiful pink and green bubble tea at home, all you need to do is cook the pearls (boba) per package directions, then separately mix the pink pitaya powder and matcha with plant milk and sweetener. Blend everything together with ice, and enjoy!
Ingredients You Need To Make Match Pink Pitaya Bubble Tea
- Matcha green tea: The quality of matcha green tea matters. I like this brand because it’s cheaper than other brands I’ve tried but still tastes great.
- Milk: I use oat milk in this recipe but any plant milk can be used, including soy, almond and cashew.
- Tapioca pearls: These can be found in select grocery stores and health stores but I usually buy these off of Amazon.
- Sweetener: Sugar, Monk Fruit and maple syrup work great as you’ll be soaking the cooked tapioca pearls in the sweetener.
- Water: To cook the tapioca pearls and make the matcha green tea
- Ice cubes: A must for a slushy.
You’ll need the following items from the kitchen:
- A small saucepan to boil the water and boba in
- Small bowl to make the matcha green tea
- A whisk or a spoon
- Wide straw for bubble tea

To get this gorgeous pink hue I use the exotic pitaya powder, which flavor has been described as a sweet cross between kiwi and pear. The fruit is high in fibre with vitamin C for healthy skin cells. Ingredients
- 1 tsp matcha tea
- 1 tsp pink pitaya powder
- 2 1/4 cups hot water
- 1/2 tapioca pearls
- 2 tbsp maple syrup or sweetener of choice
- 2 cups plant milk
- 2 cups ice
Instructions

- Prepare matcha green tea and pink pitaya: Whisk the matcha green tea powder with 1/4 cup of hot water using two separate small bowls. Wisk the pink pitaya powder with 1/4 cup of hot water. Set aside and let it cool down.
- Cook the tapioca pearls: Bring a small pot of water to a boil. Add the tapioca pearls to the water and stir until the pearls start to float to the top. Continue cooking them for the amount of time indicated on the packaging. Turn off the heat and carefully drain the boba. Pour the cooked boba into a bowl.
- Sweeten the tapioca pearls: Add sweetener and stir the tapioca pearls. Let the pearls sit for about 5 minutes, allowing them to absorb the sweetener, stirring it a few times.
- Blend: Add cool matcha with 1 cup milk and 1 cup ice to a blender. Blend on high until no large pieces of ice remain. Repeat with pink pitaya.
- Assemble your drinks: Divide the pearls between two glasses. Gently pour in pink pitaya slushy and top with green matcha slush. Enjoy.
