One Bowl Cheesy Vegan Beer Bread

This One Bowl Cheesy Vegan Beer Bread has a lovely, earthy, malty flavor with a buttery, crispy exterior and a soft, moist interior. It is the easiest bread you are ever going to make and a great way to use up any leftover beer. It requires no kneading, no rising and you only need one bowl so there is very little mess to clean up. Store in the fridge for 4-5 days and toast them whenever you are craving this warm slice of heaven.

Why Is Sugar In This Recipe?


To balance the flavor in I add sugar to dough because it balances out the bitterness of the beer and the cheesiness from the nutritional yeast. It has a similar sweetness and texture to my Vegan Cornbread Recipe.

Why Do The Directions Say To Pour Butter On Top?

Pouring delicious vegan butter over the dough creates a crispy crunchy top. If you would rather have a soft crust typical of most breads, simply mix the butter into the dough instead.

Why Use Beer In a Bread Recipe?

Beer causes the bread to rise just like you were using active dry yeast typically used in bread recipes. Use your favorite light beer to make this bread or experiment with different flavor profiles by using IPA, pale ale or a dark beer for an intense flavor. I used a local beer made by Four Winds Brewing. They have a delicious series of vegan beers. I highly recommend it.

If you don’t want to use beer you can substitute with unsweetened carbonated soda. It will cause the bread to rise slightly but it won’t have the earthy, malty flavor.

Don’t Forget To Sift

Sifting helps incorporate air into baked goods. It is so important in the recipe because of this bread’s density. If you don’t own a sifter, instead of measuring your flour by scooping it straight out of the bag or container use a spoon to gently fill your cup. Don’t pack it too tight or tap it down either. It compacts the flour and will turn your bread into a hard biscuit.

Ingredients

Scale
  • 3 cups all-purpose flour (sifted)
  • 1/4 cup nutritional yeast
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/4 cup vegan sugar
  • 12oz vegan beer, room temperature
  • 1/2 cup vegan butter, divided in half

Instructions

  1. Pre-heat oven to 350F. Grease a 9×5 inch loaf pan.
  2. Sift flour into a medium sized bowl. Add nutritional yeast, vegan sugar, room temperature beer and 1/4 of melted vegan butter. Mix together with a wooden spoon just until combined, do not over-mix or your bread will not be as tender.
  3. Spoon beer into the prepared loaf pan. Top with remaining 1/4 cup of eater butter an bake for 55-60mins or until golden brown on top. Check for doneness by inserting a toothpick. If it comes out clean it is fully baked. 
  4. Let sit in loaf pan for 10 minutes. Insert a knife  and travel around the perimeter to loosen any stuck bits. Turn out onto a baking rack and let sit for 5 minutes before slicing.

Notes

This recipe makes a very hearty bread with a crunchy buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top.
