Grilled Peaches with Basil and Coconut Ice Cream

Summer may be coming to an end but I’m holding onto every bit of it! Peaches are a fruit that I’ll miss the most (besides pineapple) and especially grilled peaches! Today, I’m sharing my recipe for Grilled Peaches with Basil and Coconut Ice Cream.

For the best results with this dish, start with peaches that are firm when you give them a gentle squeeze. If your peaches are underripe, not too sweet or less-than-perfect then throw them on the grill. The plump, firm flesh will hold up really well to high heat. In fact, it brings out their natural juices and intensifies their flavour. The freshest peaches come from the Farmers Markets. Locate one of BC Farmers Markets near you for more information.


Peaches and coconut go very well together. One of my favourite ice cream brands is Coconut Bliss. You wouldn’t even know it wasn’t dairy!

Grilled Peaches with Basil and Coconut Ice Cream

This Grilled Peaches with Basil and Coconut Ice Cream dish is the perfect goodbye to summer and is packed with flavour!

Ingredients

Scale
  • Two peaches, halved and pitted 
  • 2 tsp of neutral-flavored oil
  • 2 tbsp of coconut or brown sugar
  • ½ tsp of cinnamon 
  • 2 tbsp chopped toasted walnuts 
  • 1 tbsp basil cut into ribbons or chiffonade 
  • 2 scoops of coconut ice cream

Instructions

  1. Prepare a gas or charcoal grill to medium heat.  You’ll know it hot enough when you can hold your hand an inch above the grate for 3-4 seconds.
  2. Lightly brush the peaches with oil.
  3. Set the peaches, cut side down, a few inches apart on the medium-hot grill.
  4. Do not move the peaches for 2-3 mins.  Cook the peaches until grill marks forms, turning as necessary make a crisscross mark for best presentation.
  5. Turn the peach halves over, sprinkle with cinnamon and sugar.
  6. Cook until peaches are tender, but not falling apart.  About 8 mins total.
  7. Remove from heat.  Place two halves in a small dessert bowl.
  8. Top with coconut ice cream, chiffonade basil and chopped walnuts.
  9. Serve immediately
