Camu Camu is a cherry-like fruit that grows in the Amazon rainforest in Peru and Brazil. It is packed with antioxidants and vitamin C to help protect you from free radicals and boost your immune system. In fact, Camu Camu has 60 times more Vitamin C than an orange does. You can purchase the Camu Camu powder that I used on Amazon.


You know I wouldn’t just add in one immune-boosting ingredient to my recipe, so I’ve paired the Camu Camu with blackberries, raspberries and strawberries that match well with sweet 100% pure maple syrup and vanilla and cut the tartness. I’ve also added all-natural almond butter on top.

This recipe is easy to make. Mix your milk, chia seeds, vanilla, maple syrup and Camu Camu powder and place it in the fridge for 6 hours. I recommend making this before bed, and you’ll have a ready-made breakfast in the morning.

Ingredients

  • 1 cup of plant milk

  • ¼ cup chia seeds

  • 1 tsp camu camu powder (purchase here on Amazon)

  • 2-4 tbsp maple syrup (depending on how sweet you want it)

  • ½ tsp vanilla extract

TOPPINGS:

  • 2 tbsp almond butter or another nut butter

  • 3 blackberries, halved

  • 3 raspberries, halved

  • 4 strawberry hearts

  • 1 tbsp almond slices

Instructions

  1. Refrigerate for 6 hours or overnight.

  2. Place pudding in bowls and top with toppings
