1 tbsp of olive oil
1 ½ cups of corn kernels
1 cup of shredded purple cabbage
12 corn tortillas
½ cup of avocado cream
½ cup of mango salsa
Cilantro and lime for garnish
Avocado Cream
½ ripe avocado
¼ cup of vegan mayo
1 tbsp lime juice
Salt and pepper
Make the mango salsa and avocado cream.
Heat olive oil a skillet over medium heat. Add corn and sauté for 3-4 minutes. Add BBQ jackfruit and sauté for an additional 4 minutes. Remove from heat.
Carefully remove the tortillas from the oven.
Fill tortillas halfway with jackfruit mixture. Top with shredded cabbage, mango salsa, avocado cream. Garnish with cilantro
Avocado Cream
Place avocado, mayo and lime juice in a small blender or food processor. Blend until smooth and creamy. Season with salt and pepper.
