Avocado toast is a dish we can have fun with like I did with my recipe for an Avocado Toast with Spiced Sunflower Seeds. There are many variations of an avocado toast and with no rules to break, the creativity is limitless.
This recipe is for a tangy mashed avocado spread, that lightly covers crisp bread, topped with spicy radish, fresh cucumber and a spicy spirulina sunflower seed mixture that you can learn to create in the recipe card below. I use my sunflower mixture on many recipes for salads, soups, baked potatoes, trail mix and of course, avocado toast. I saw a bag at a speciality grocery store and was shocked to see the whopping $14 price tag so I took to the kitchen and made them myself.
Sunflower seeds are full of healthy fats, iron, Vitamin B6 and magnesium. Most importantly, sunflower seeds are accessible almost everyone. So much so that they sell them as a gas station! These healthy seeds paired with nutrient-rich spirulina, nutritional yeast and fresh lemon with nurture you from the inside out.

Ingredients
Spiced Sunflower Seeds:

2 cups raw sunflower seeds

1 tbsp light vegetable oil
-
1 tbsp lemon juice
-
1/8 cup water
-
½ tsp garlic powder
-
1 tsp spirulina powder (blue or green on Amazon)
-
¼ tsp ground cayenne
-
1 tsp lemon pepper
-
1 tbsp nutritional yeast
-
¼ tsp salt
Avocado Toast:
-
4 slices of whole-grain bread
-
1 large ripe avocado
-
1 tsp fresh lemon juice
-
1 tbsp nutritional yeast
-
2 radishes, thinly sliced
-
8 slices cucumber, cut with star cutter (optional) (buy here on Amazon)

4 tbsp spiced sunflower seeds
-
Salt and pepper to taste
Instructions
For Spiced Sunflower Seeds:

Preheat oven to 350F.

Line a baking sheet with parchment paper.

Place all the sunflower seeds into a large bowl with the water, lemon juice and oil. Stir until all the seeds are wet. Set aside for a few minutes to allow the seed to soak up the moisture

In a separate bowl mix together all spices and salt. Add to the bowl with sunflower seeds and stir until thoroughly combined.

Spread seeds in a single layer on the lined baking sheet taking care not to overcrowd.

Bake for 3 minutes then stir. Bake for another 3-4 minutes or until seeds is crispy. Watch carefully as the seeds can burn quickly.
Avocado Toast:

Toast bread as desired.

Meanwhile, add avocado, lemon juice, nutritional yeast, salt and pepper to a small bowl. Mash with a fork until combined and smooth.

Spread evenly on toast and top with sliced cucumber, stars (if desired), radishes and spiced sunflower seeds
