How To Make A Vegan Huckleberry Strawberry Pie

Vegan Huckleberry Strawberry Pie is filled with fresh sweet strawberries and tangy huckleberries coated in a light strawberry glaze topped with coconut whipped cream. Made in a few simple steps this easy to make pie is a crowd pleaser every time!

This Vegan Huckleberry Strawberry Pie is the perfect Canada Day dessert or for a hot summer day! This jello and gelatin free dessert is simple to make and a crowd pleaser every time! It requires minimal baking and red huckleberries give this pie a tart twist. The glaze is just thick enough to hold the strawberries together, but just loose enough so a couple of stray strawberries fall out onto the plate. Those stray strawberries are perfect for swiping through some coconut whipped cream.

What are Huckleberries?


Huckleberries might sound a bit like a made-up creation for books or cartoons, but I assure you they’re real fruits. In fact, both red and blue grow in the forest behind my home in North Vancouver. Huckleberries are edible and quite tasty. The small, round berries resemble blueberries the red variety look similar to red currents. These gems are so special because they only grow in the wild like the cherished truffle. 

Western huckleberries belong to the genus Vaccinium and found among the coniferous forests of the West Coast. You often see them growing out of dead tree stumps. I watch for them every spring with anticipation. They grow for a short time in the spring and summer.

Can’t Find Huckleberries?

Don’t worry if you can’t find huckleberries. You can substitute red currents, blueberries, blackberries your favourite berry or simply omit them from the recipe.

Why I Don’t Use Gelatin

Gelatin is protein obtained by boiling skin, tendons, ligaments, and/or bones with water. It is usually obtained from cows or pigs. That does not sound appetizing in the least and I certainly don’t want that in my beautiful pie. Most importantly I’m not ok with treating animals in that way. Using cornstarch is a kinder solution for everyone.

This jello-free Vegan Huckleberry Strawberry Pie is simple to make and a crowd pleaser every time!

Ingredients

Scale
  • 1 store-bought vegan pie crust  
  • 4 heaping cups of whole strawberries
  • ¼ cup of huckleberries
  • 1 cup of granulated sugar
  • ¾ cups of water
  • 3 tbsp cornstarch or arrowroot powder
  • 1 tbsp lemon juice
  • Optional topping: Coconut, soy or aquafaba whipped cream

Instructions

  1. Preheat oven to 400 degrees. If using prepared frozen pie crust, allow thawing for 10-15 mins. Poke holes all over the bottom using a fork or use pie weights so the dough doesn’t puff up. 
  2. Bake per package direction
  3. After baking let cool for 10 mins.
  4. Wash and hull the strawberries. Leave them whole as it makes for a lovely appearance.
  5. Gently wash the huckleberries and remove and greenery still attached. Set aside.
  6. Add 1 cup of strawberries to a saucepan. Mash them with a fork, then stir in the sugar, water, cornstarch and lemon juice. Bring to a boil, stirring frequently. Continue to break apart large pieces of strawberry as they cook.
  7. When the mixture boils, cook for another 3 mins or until thickens. Remove from heat.
  8. Place the remainder of the strawberries in the cooked pie crust, pointy side up.
  9. Sprinkle on the huckleberries reserving some for garnish.
  10. Pour the warm sauce over the berries in an even layer.
  11. Chill in the refrigerator for 4-6 hours. The sauce will thicken nicely in the fridge.
  12. Serve with coconut whipped cream or non-dairy ice cream if desired.
