What You Need For Coconut Bacon
To execute this recipe properly you’ll need two things. First, you’ll want to purchase unsweetened coconut flakes, not unsweetened shredded coconut. The big flakes provide the best results.
Second, you’ll need to purchase Liquid Smoke. If you haven’t heard of it before, Liquid smoke is a water-soluble liquid used for flavouring. This is used as a substitute for cooking with wood smoke. Storebought bacon substitutions are typically made of TVP “textured vegetable protein” aka soy and then coloured. For those who cannot have soy and want to stay away from additives, this is going to be the healthier option and much cheaper.

Coconut is rich in fibre and MCTs, and may offer a number of health benefits such as improved heart health and digestion. It is high in calories and saturated fat so you’ll want to eat it in moderation.

This recipe tastes just like the real thing. Coconut bacon is savoury, sweet, salty and crispy.

Ingredients
- 2 cups of unsweetened coconut flakes

3 tbsp of liquid smoke

2 tbsp of tamarin or soy sauce

3 tbsp of maple syrup

Pinch of sea salt
Instructions
- Ensure the oven rack is in middle and preheat to 350F. Line a baking sheet with parchment paper.

Add all ingredients to a bowl. Mix well until coconut is saturated.

Spread evenly on baking tray.

Bake for 15-20 minutes turning tray and stirring halfway through cooking. Watch carefully at the end of cooking as the coconut can burn quickly. If you like your bacon soft cook for 10-12 minutes. If you prefer it crispy cook for 12-15 minutes or until it is golden brown. Coconut will dry and crisp up more after they cool.

The bacon is ready to use immediately or store in the freezer for several months. No need to defrost the bacon-you can use it right from the freezer.
