White Bean and Mushroom Bowl

In this White Bean and Mushroom Bowl, I’m offering up staples to a vegan diet and the not so secret that beans are good for your health. Beans and legumes are a pillar in a vegan diet. Many dishes are created around them because they are an inexpensive way to receive nutrients and keep you full. Depending on your health requirements, you could benefit from eating more or less so be sure to check with a professional if you feel like your body is reacting to beans! This recipe is vitamin and protein-packed and ready in 10 minutes!  

I always keep a can of beans in my pantry because as a busy mom, it’s a simple way to create a dish from scratch. My tip is to always rinse the beans before cooking because you’ll want to remove the liquid that can cause gas and it also leaves the beans with a lighter, more satisfying flavour.

Ingredients

Scale
  • 1 cup of white (cannellini) bean
  • 1 tbsp of olive oil or other light oil
  • ½ small white onion diced
  • 1 clove of garlic finely chopped
  • 1 1/2 cup of chopped kale
  • 68 cremini or button mushrooms, sliced
  • 1 tbsp of fresh lemon juice

Instructions

  1. Heat oil in a non-stick skillet over medium heat.
  2. Add onion and garlic and fry for 1-2 mins.
  3. Add mushrooms, beans and kale. Fry until heated and kale is wilted (about 3-4 mins)
  4. Finish with salt and pepper to taste and fresh lemon juice.
