Vegan Peanut Brittle uses simple ingredients, is outstandingly-delicious and is the perfect homemade gift to show someone they are in your thoughts. Peanut Brittle is one of those desserts that takes me back to my childhood. I feel like a kid again each time I bite into the peanut-flavoured honeycomb while crumbs fall stick to my face.
Vegan Peanut Brittle Makes a Great Gift
I recently made a batch to give as a gift to close friends of ours and it was a hit! No gift is better than one that comes straight from the kitchen and from your heart. Place a few pieces of brittle in a decorated box or clear candy bags to give as a hostess gift, or to a friend to let them know you are thinking about them.
Tips For Making Brittle
There are a few things to keep in mind when making this treat.
The sugar gets VERY hot. Be sure to use a heat resistant glove or oven mitt when stirring the sugar. You need to stir for nearly 20 minutes to get the consistency to the hard crack stage. You will also need a candy thermometer for the recipe to achieve the right result. You can find one on Amazon or at your closest home-store.
Can I Use A Different Nut In This Brittle?
If you have an allergy or a taste preference for a different nut you don’t have to use peanuts. This recipe is so versatile in place of peanuts you can substitute a nut such as cashew, pecans, almond, walnuts, pine nuts or you can even sub dried fruit.

Ingredients
- 1 cup of sugar
- ½ cup golden corn syrup
- ¼ cup of water
- 1 cup salted peanuts
- 2 Tbsp vegan butter
- ¼ tsp salt
- 1 tsp baking soda
Instructions
- Spray a baking sheet with non-stick spray and set aside.
- Measure out the peanuts, vegan butter and baking soda and set aside for easy access later.
- Place the sugar, syrup, salt and water into a very large heavy-bottomed pot. Turn the heat to medium-high (about 1 less than maximum, so if it goes to 5, turn it up to 4) and heat, stirring all the while, until the sugar is completely dissolved and beginning to boil. Use an oven mitt or other heat resistant gloves to protect your hands, if needed.
- Set up the sugar thermometer. Add the peanuts stirring vigorously until the mixture reaches 300°F, the hard crack stage. Immediately remove from the heat and stir in the vegan butter and baking soda. Work quickly here as the mixture will want to start setting, so the speed is important. When you add the baking soda the mix will bubble up, so be very careful. Sugar is very hot and sugar burns are the worst!!!
- Immediately transfer the mixture to the baking sheet. Use a spatula to spread the mixture out as far as possible so you get a nice thin candy.
- Place into the fridge to cool and when cold, place the bottom of a knife onto the candy and lightly tap the knife with a hammer, cracking the candy gently into pieces.
