How To Make Lavender Syrup

The secret to infusing the beautiful floral scent of lavender into this lemonade is by making a simple syrup. I alway make extra to use in Carrington’s warm oat milk for a nighttime soother before bed. It’s also excellent in lattes or pour it over baked goods for added moisture and flavour.

  • First combine cut lavender and sugar in a bowl. Use clean fingers to massage the flowers into the sugar. This is similar to method used in my Lilac Lemon Loaf
  • Pour boiling water over the lavender sugar. Stir with a spoon until all the sugar has melted. Cover and let infuse for 1 hour or overnight.
  • Place a sieve over a bowl and strain the syrup.
  • Depending on the size of your pitcher you may not want to use the entire amount of syrup. I recommend adding half the amount then taste adding more in desired.

Tips For Making Purple Lavender Lemonade:

  • Use lavender sparingly. The beautiful floral scent can easily become overpowering.
  • Start by adding half the amount of lavender syrup to the lemonade. Taste and add more if desired.
  • Only use organic lavender. Do not use florist lavender as they have been sprayed with harmful chemicals.
  • All types of lavender are edible, however English and Provence lavender are most often used in cooking.
  • I use butterfly pea powder because of the health benefits and beautiful colour. If you don’t have any, this lemonade will taste just as delicious.

What is Blue Butterfly Pea Powder?

Butterfly Pea Flower is a plant common to most South East Asian countries. It has many health benefits such as:

1. It’s filled with anti-inflammatory compounds: That means it can help your body fight back against the damage caused by free radicals, like inflammation and signs of aging in the skin. It’s particularly rich in anthocyanin, a type of antioxidant also found in blueberries and red wine that is well-known for fighting inflammation and boosting heart health.

2. It could help with cognitive function: Butterfly pea flower is a natural nootropic, which means that it can potentially help improve cognitive function.

3. It’s good for your skin: Butterfly pea flower makes sense as a refreshing spa beverage because it has bonafide beauty benefits thanks to all of those antioxidants.

4. It changes color (in a good way): The most intriguing aspect of butterfly pea flower as an ingredient is that it’s subject to change color based on PH balance. Adding something like lemon juice will purple-ify the drink, while playing with other ingredients can zap it red.
