Description
Ingredients (serves 12):
- 1 block firm tofu pressed*
- 2 tbsp oil or vegetable stock if oil free
- 2 tbsp nutritional yeast
- 2 tbsp soya sauce or tamari (gluten-free)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp curry powder
- 1 sweet potato cut into 1 inch cubes
- 1 fennel bulb, sliced
- 2 cups/1 pound greens bean, chopped
- 3 carrots, shredded
- 3 cloves of garlic, minced
- 1 Tbsp Smooth Peanut Butter
- 2 Tbsp Apple cider vinegar
- 1 Tbsp Soya sauce or tamari for gluten-free
- 2 tsp red curry paste
- 2 tbsp water
- 2 cups hot cooked brown rice
- 1 orange zested and juiced
- 2 cups hot cooked cauliflower rice
- Optional topping: Chopped unsalted peanuts and sliced green onion

To ensure class runs smoothly, please do the following:
- Have ingredients and equipment set out and ready to cook, have items requiring prep in advance of class completed.
- Log into Zoom 10 minutes prior to start time so we can start on time.
- Have your laptop, phone or tablet charged and set up close to your workstation.
- Be ready to have fun!
