Calling all doughnut lovers! If you crave a soft, moist and delicious fresh-baked pastry every now and then but can’t indulge in regular doughnuts, this baked vegan apple fritter recipe is for you. I don’t eat doughnuts too often but apple fritters are my husband’s guilty pleasure and I wanted to surprise him one day. That’s how this scrumptious recipe came about!
These baked vegan apple fritters taste every bit like a doughnut from the shop but this recipe is dairy-free with aquafaba instead of eggs. Apple juice is the not-so-secret icing ingredient that soaks into the fritter and makes it ooey and gooey! Most recipes will call for refined white sugar in the dough but I don’t add it because the icing is sweet enough.
Tip: I make my own powdered sugar by grinding regular sugar in my Vitamix until it is a fine powder

Baked Vegan Apple Fritters
Calling all doughnut lovers! If you crave a soft, moist and delicious fresh-baked pastry every now and then but can’t indulge in regular doughnuts, this baked vegan apple fritter recipe is for you.

Ingredients
- 1 1/4 cup of tart apples, peeled, cored and finely chopped (about 1 ½ apples)
- 2 cup of all-purpose flour
- 1/2 cup of coconut sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 ½ tsp cinnamon
- 1/2 tsp nutmeg
- 4 tbsp aquafaba
- 4 tbsp coconut oil, melted
- ¼ cup of non-dairy milk (I use almond)
Icing
- 1 cup of powdered sugar (see my tip)
- ¼ tsp cinnamon
- 1tbsp + 2 tsp apple juice or more if needed
Instructions
- Preheat oven to 375 degrees
- Line a baking tray with parchment paper or non-stick silicone.
- Ensure the oven rack is in the upper-middle position.
- In a large bowl, combine the flour, coconut sugar, baking powder, cinnamon, nutmeg, salt. Mix well
- Add the apples, aquafaba, coconut oil and almond milk. Mix well. I had the best result when I used a wooden spoon then got my hands in it.
- Scoop about ½ cup worth of batter for each fritter. Place on a baking tray with at least 1-inch space between each fritter. Flatten slightly with hand or spoon. Should make 6 large fritters or 8 smaller ones.
- Bake for 20-22 mins or until golden brown on top.
- While fritters are baking mix ingredients for the icing in a small bowl.
- While fritters are still warm pour icing sugar over the tops.
It was a fun experiment and yummy💚 I made half batch size and also changed some ingredients. I used GF all-purpose flour, almond flour and oat flour. I’ve noticed it might get better result for some reason from my experience that is to use a few different type of flour instead of one type of flour. Thank you,Susan💚

– 1/4 + 1/8 cup gluten-free all-purpose flour
– 1/4 cup + 1 tbsp almond flour
– 1/4 cup + 1 tbsp oat flour
– 1/8 cup maple or honey
– 1 tsp baking powder
– 1/4 tsp salt
– 3/4 tsp cinnamon

– 2 flaxseed egg
– 2tbsp applesauce
– 1/8 almond milk
Topping sauce
– 3/4 cup maple or honey
